Há muito tempo que quero cozinhar coelho no meu blog de culinária. É feito com este coelho com ameixas secas num molho ultra saboroso e cremoso! Traz-me de volta memórias da minha infância. Já não o como há séculos! Mas este prato ainda é delicioso. Com algumas batatas cozidas a vapor, nem sequer se sentirá como se estivesse a exagerar. Bem, quase!
Receita para coelho com ameixas secas para 6 pessoas:
-50g de manteiga -2 colheres de sopa de azeite de oliva -1,5 kg de coelho (sela, perna de borrego, etc.) -300g de toucinho fumado -1 cebola -3 dentes de alho -1 colher de sopa grande de farinha -350ml de vinho branco seco -500ml de caldo de vegetais -350g de ameixas secas sem caroço -sal, pimenta
Isto é o, bem os coelhos.
Colocar o azeite e metade da manteiga na caçarola em lume forte e colocar os pedaços de coelho. Acrescentar sal e pimenta.
Virar a carne e dourar de todos os lados.
Quando todos os lados tiverem dourado um pouco, retirar a carne da panela.
Colocar as banhas em cima e grelhá-las também.
Cortar a cebola e os dentes de alho.
Retirar o toucinho e colocar a cebola picada e o alho na gordura. Baixar o calor se necessário para não queimar o fundo da caçarola, pois são os sucos assados que darão um sabor fabuloso ao prato.
Quando começarem a torrar ligeiramente, adicionar a restante manteiga e farinha.
Mexer com uma colher durante 20 segundos e depois adicionar um pouco de caldo de vegetais. Raspar bem o fundo da caçarola para recolher os sumos de cozinha.
Depois um pouco de vinho branco.
Mexer com força. O molho vai engrossar muito rapidamente. Quando não tiver mais caroços, pode adicionar mais líquido.
Colocar a carne em cima do molho e todo o sumo que este emitiu, contido no prato.
Acrescentar as despensas (ainda com o sumo) e 250g de ameixas secas.
Adicionar o restante caldo de vegetais e vinho branco.
Fechar a panela e cozinhar durante 45 minutos.
Após este tempo, abrir a panela, adicionar os restantes 100g de ameixas secas e continuar a cozinhar durante 50 minutos a uma hora.
Normalmente, nesta fase, o molho é suave. Naturalmente, sal e pimenta devem ser adicionados a gosto. Se quiser um molho ainda mais suave (tenha cuidado para não evaporar tudo também!) pode continuar a cozinhar o molho sem a carne e adicioná-lo logo no final. Sirva este prato quente com batatas cozidas a vapor ou massa fresca!
