¡Aquí está mi segunda receta de mi mini asociación de dos recetas con los vinos Plaimont! Sigo con los sabores invernales con esta pasta radiatori con col rizada, en una crema Fourme d’Ambert, coronada con peras caramelizadas y nueces. Es una auténtica delicia, rica y reconfortante, perfecta para acompañar una copa de vino tinto.
Para 4 a 6 personas:
1/2 col rizada
300g de tocino ahumado
50 g de mantequilla semisalada
3 cucharadas de aceite de oliva
300 ml de nata líquida
250 g de queso Fourme d’Ambert
2 peras
500 g de pasta radiatori
nuez de pecán
sal pimienta
Prepare su col rizada.
Tendrás la mitad.
Retirar las primeras hojas, lavar si es necesario. A continuación, cortar en tiras finas.
Aquí he tomado falda ahumada de corte grueso. ¡Haga hermosos lardones con ella!
Poner la mantequilla semi-salada y el aceite de oliva en una sartén grande. vierta el tocino.
Deja que se coloreen bien;
Retirarlas de la sartén y dejar la grasa dentro.
Añade la col rizada.
Dejar cocer y, si es necesario, poner una tapa para facilitar la cocción del repollo, que no se deshace mucho.
Cuando esté bien cocido, después de 15-20 minutos, vierta la crema.
Retira la corteza del Fourme (¡también puedes dejarla!) y córtala en trozos.
Añádelo a la sartén.
Remover para que se derrita. Pon sal y pimienta a tu gusto.
Pelar y cortar en cuartos las peras.
Cortar cada cuarto en trozos más finos. Vierta un poco de aceite de oliva en una sartén pequeña y coloque los trozos de pera encima.
Añade sal y pimienta.
Gírelos de vez en cuando, deben estar bien cocidos y caramelizados.
Hornee la masa como se indica en su paquete.
Escúrralos bien.
Vuelva a verterlos en la olla y añada la col verde con la crema Fourme d’Ambert.
Añade el bacon.
Vierta las rebanadas en los platos, cubra con las peras caramelizadas y espolvoree con las nueces. Una última vuelta de pimienta negra recién molida y a servir sin demora.
