Aqui está a minha segunda receita para a minha mini parceria de duas receitas com vinhos Plaimont! Estou a aderir aos sabores de Inverno com esta massa radiatori com couve, num creme Fourme d’Ambert, coberto com pêras caramelizadas e nozes pecans. É um verdadeiro deleite, rico e reconfortante, perfeito com um copo de vinho tinto.
Para 4 a 6 pessoas:
1/2 couve
300g de toucinho fumado
50g de manteiga semi-salgada
3 colheres de sopa de azeite de oliva
300ml de creme completo
250g de queijo Fourme d’Ambert
2 pêras
500g de massa para radiadores
noz pecan
sal, pimenta
Prepare a sua couve.
Terá metade dela.
Retirar as primeiras folhas, lavar se necessário. Depois cortar em tiras finas.
Tomei aqui o cerne fumado de corte grosso. Faça belas banhas com ela!
Colocar a manteiga semi-salgada e o azeite numa grande frigideira. verter no toucinho.
Deixe-os colorir bem;
Retirá-los da panela e deixar a gordura lá dentro.
Acrescentar a couve.
Deixar cozinhar e, se necessário, colocar uma tampa para facilitar a cozedura da couve, que não derrete muito.
Quando estiver bem cozido, após 15-20 minutos, verter o creme.
Retirar a crosta do Fourme (também pode deixá-la ligada!) e cortá-la em pedaços.
Adicioná-lo à panela.
Mexer para derreter. Acrescentar sal e pimenta a gosto.
Descascar e cortar as pêras em quartos.
Cortar cada quarto em pedaços mais finos. Verter um pouco de azeite numa pequena panela e colocar os pedaços de pêra em cima.
Acrescentar sal e pimenta.
Virem-nos de vez em quando, devem ser bem cozinhados e caramelizados.
Asse a massa como indicado na sua embalagem.
Esvazie-os bem.
Deitá-las de novo no tacho e adicionar a couve verde com o creme Fourme d’Ambert.
Acrescentar o bacon.
Verter as fatias em pratos, cobrir com pêras caramelizadas e polvilhar com nozes pecans. Uma volta final de pimenta preta recém moída e servir sem demora!
