Esta carne de cerdo es especialmente aromática. Esta es LA receta del cerdo a la barbacoa china. Pruébelo en la barbacoa o en el horno cuando haga buen tiempo. ¡Os pongo esta receta que llevaba mucho tiempo buscando! La receta de la salsa se puede utilizar sólo para glasear el cerdo. ¡En esta receta, te doy una versión de bocados de cerdo Char Siu! Char Siu significa «asado en un asador».
Me gustaría aclarar algunos puntos sobre los ingredientes. Te doy una receta real, no una falsa como las que se ven a menudo en los libros de cocina china. ¡Siempre se olvidan de dar sus secretos que son bicarbonato y glutamato! Y para tener éxito, ¡es mejor tenerlos a mano! El bicarbonato de sodio hace que la carne se ablande (especialmente en el caso de la ternera) y el glutamato es un potenciador del sabor que debe utilizarse con moderación. El otro punto se refiere al alcohol rosado. En los restaurantes chinos nos suelen ofrecer un «sake» al final de la comida con el vasito silbante o con la mujer desnuda en el fondo del vaso. No se trata de un sake japonés, sino de el alcohol de la rosa, que sigue siendo de 54°. Este es el que uso en mi receta. Se puede encontrar en tiendas de comestibles asiáticas, al igual que el colorante rojo.
Veremos más adelante que esta carne de cerdo cocinada sin los dientes de ajo, sólo con la salsa char siu, es la que se utiliza en el arroz cantonés (este es el sabor en el arroz cantonés del bueno restaurantes!!) y en los bollos de cerdo lacados. ¡Ambas recetas llegarán algún día!
Receta de «cerdo rojo char siu» para 2-3 personas:
-400g de lomo de cerdo deshuesado
-3 dientes de ajo
-1 cucharada de aceite
Salsa Char Siu
-40g de jarabe de maltosa (o jarabe de glucosa en G Detou)
-40g de miel
-40g de salsa Hoisin (se pronuncia «oïe zine», disponible en Tang frères)
-30g de salsa de soja clara
15g de Mei Kuei Lu Chiew, el alcohol de rosa (¡54°!)
-1/2 cucharadita de cinco especias chinas
-1/2 cucharadita de aceite de sésamo tostado
3-4 cucharaditas de tinte rojo
-2 buenas pizcas de bicarbonato de sodio
-1 pizca de glutamato
Poner en un bol la miel, la salsa de soja, las cinco especias, el colorante rojo, la salsa hoisin, el aceite de sésamo, el jarabe de glucosa y el alcohol de rosas.
Mezclar bien.
Cortar el lomo de cerdo en trozos como se ve en la foto o en trozos muy grandes si se quiere hacer una barbacoa.
Vierta 2/3 de la salsa Char Siu y añada el glutamato, el bicarbonato, el aceite y los dientes de ajo machacados . Dejar marinar toda la noche, si es posible en un lugar fresco.
Al día siguiente, cocinar en la barbacoa, pincelando la carne con la salsa restante o, como yo, en el horno a 240°C durante 15-20 minutos, vigilando y dando la vuelta a los trozos de carne hasta que se caramelicen. Servir inmediatamente.
