Esta carne de porco é particularmente perfumada. Esta é A receita da carne de porco chinesa para churrasco. Experimente-o no churrasco ou no forno com bom tempo. Apresento-vos esta receita que há muito tempo que procuro! A receita do molho pode ser utilizada apenas para esmaltar a carne de porco. Nesta receita, apresento-vos uma versão de mordidas de porco Char Siu! Char Siu significa “assado no espeto”.
Gostaria de esclarecer alguns pontos sobre os ingredientes. Estou a dar-lhe uma receita real, não uma falsa como muitas vezes se vê nos livros de cozinha chineses. Esquecem-se sempre de dar os seus segredos que são bicarbonato de sódio e glutamato! E para ter sucesso, é melhor tê-los à mão! O bicarbonato de sódio torna a carne macia (especialmente para carne de vaca) e o glutamato é um intensificador de sabor a ser usado com parcimónia! O outro ponto diz respeito ao álcool de rosa. Nos restaurantes chineses é-nos frequentemente oferecido um “sake” no final da refeição com o pequeno copo a assobiar ou com a mulher nua no fundo do copo. Isto não é sake japonês, mas o álcool de rosas que ainda é 54°! Esta é a que utilizo na minha receita. Pode ser encontrado em mercearias asiáticas, tal como o corante vermelho.
Veremos mais tarde que esta carne de porco cozida sem os dentes de alho, apenas com o molho char siu, é a utilizada no arroz cantonês (este é o sabor do bom arroz cantonês restaurantes!!) e nos pãezinhos de porco envernizados. Ambas as receitas chegarão um dia!
Receita de “porco vermelho char siu” para 2-3 pessoas:
-400g de lombo de porco desossado
-3 dentes de alho
-1 colher de sopa de óleo
Molho Char Siu
-40g de xarope de maltose (ou xarope de glucose em G Detou)
-40g de mel
-40g de molho Hoisin (pronuncia-se “oïe zine”, disponível em Tang frères)
-30g de molho de soja transparente
15g de Mei Kuei Lu Chiew, o álcool de rosa (54°!)
-1/2 colher de chá de cinco especiarias chinesas
-1/2 colher de chá de óleo de gergelim tostado
3-4 colheres de chá corante vermelho
-2 boas pitadas de bicarbonato de sódio
-1 pitada de glutamato
Colocar o mel, molho de soja, cinco especiarias, corante vermelho, molho de hoisin, óleo de sésamo, xarope de glucose e álcool de rosas numa tigela.
Misturar bem.
Corte o lombo de porco em pedaços, como mostra a foto, ou em pedaços muito grandes, se o quiser grelhar.
Verter 2/3 do molho Char Siu e adicionar o glutamato, bicarbonato, óleo e dentes de alho esmagados . Deixar a marinar durante a noite, se possível num local fresco.
No dia seguinte, cozinhar no churrasco, escovando a carne com o molho restante ou, como eu, no forno a 240°C durante 15-20 minutos, mantendo um olho e virando os pedaços de carne até serem caramelizados. Servir imediatamente.
