¡Esta receta china es una delicia! Trozos de cerdo rebozados en una rosquilla, ¡fritos dos veces para una textura extra crujiente! La salsa, ligeramente ácida y dulce, hace cosquillas en las papilas gustativas. Una receta sencilla que puede ser preparada con antelación y terminada en el último momento.
En primer lugar me gustaría aclarar un punto sobre uno de los ingredientes: el ketchup. Para los detractores (¡que puedo entender!) de la salsa americana, sólo quiero recordarles los ingredientes del ketchup: azúcar, tomate, vinagre. Exactamente lo que buscamos en esta receta, ¡dulce y agria! Y en uno de mis viajes a Cantón pregunté por la receta de esta carne de cerdo, y bueno, es una salsa equivalente al ketchup que utilizan, o una pasta de tomate a la que de todas formas le añaden vinagre y azúcar. ¡Buena receta!
Receta de «cerdo en salsa agridulce» para 4 personas:
-400g de lomo de cerdo -1 cucharadita de harina de maíz -2 cucharaditas de vino chino -1 cucharadita de salsa de soja clara -1/4 cucharadita de cinco especias -1/2 cucharadita de bicarbonato de sodio Pegar -55g de harina -55g de harina de maíz -1 clara de huevo -1 cucharada de aceite -agua caliente Salsa -105g de azúcar -90g de ketchup -200g de zumo de piña -135g de vinagre blanco (de arroz o de alcohol) media cucharadita de sal (1/4+1/8 de una cucharadita americana) -1 cucharada de harina de maíz diluida en 4 cucharadas de agua -50g de agua Verduras: -1/2 pimiento verde -1/2 pimiento rojo -1/2 cebolla -200g de trozos de piña (¡en lata!)
Si quieres preparar la receta con antelación, te sugiero que cocine la salsa, y empiece la primera cocción de los buñuelos de cerdo. Luego, en el último momento, terminar con la segunda fritura y verter la salsa para cubrir todo.
Comience por cortar el cerdo asado en trozos adecuados para dos bocados. Añadir la salsa de soja clara, el vino chino, el polvo de cinco especias, el bicarbonato y la harina de maíz. Dejar en un lugar fresco durante al menos una hora.
Verter todos los ingredientes de la salsa, excepto la harina de maíz y el agua.
Añadir las verduras, los pimientos, las cebollas y la piña. Poner a fuego lento durante unos diez minutos para cocinar la cebolla y los pimientos. Así que puedes cocinar un poco más o un poco menos.
Después de 10 minutos, añadir la harina de maíz diluida y los 50 g de agua si la salsa se espesa demasiado.
Dejar cocer un minuto y apagar el fuego. Haz una reserva.
Preparar la masa de los buñuelos para el cerdo. Mezclar la harina, la harina de maíz y la clara de huevo.
Añadir agua caliente poco a poco hasta obtener una pasta suave. Ni demasiado seco ni demasiado líquido.
Vierta esta pasta sobre la carne de cerdo.
Calentar el aceite en un wok o sartén. Cuando el aceite esté caliente, añadir los trozos de cerdo uno a uno. No freír demasiada carne de cerdo al mismo tiempo. Cocine en dos o tres tandas.
Dar la vuelta a los trozos para que se doren por todos los lados.
Colocar cada vez en una toalla de papel mientras se cocinan las otras piezas.
Una vez que todo esté cocido, dejar que el aceite se caliente un poco más y luego añadir todo a la vez. Freiremos el cerdo una segunda vez para que quede más crujiente. ¡Qué rico!
Escurrir el aceite del wok en otro recipiente (una sartén vacía) y devolver los trozos de cerdo fritos al wok, verter la salsa agridulce sobre los buñuelos.
Cocinar sólo para calentar la salsa. Servir inmediatamente con arroz.
