Esta receita chinesa é um deleite! Pedaços de carne de porco numa massa de donut, frita duas vezes para uma textura extra crocante! O molho ligeiramente ácido e doce faz cócegas nas papilas gustativas. Uma receita simples que pode ser preparada com antecedência e terminada no último segundo em .
Antes de mais, gostaria de esclarecer um ponto sobre um dos ingredientes: o ketchup. Para os detractores (que eu posso compreender!) do molho americano, quero apenas recordar-vos os ingredientes do ketchup: açúcar, tomate, vinagre. Exactamente o que procuramos nesta receita, doce e azeda ! E numa das minhas viagens a Cantão perguntei sobre a receita desta carne de porco, e bem, é um molho equivalente ao ketchup que utilizam, ou uma pasta de tomate à qual adicionam vinagre e açúcar de qualquer forma. Receita de “carne de porco em molho doce e azedo” para 4 pessoas:
-400g de lombinho de porco -1 colher de chá de farinha de milho -2 colheres de chá de vinho chinês -1 colher de chá de molho de soja transparente -1/4 colher de chá de cinco especiarias -1/2 colher de chá de bicarbonato de sódio Colar -55g de farinha -55g de farinha de milho -1 clara de ovo -1 colher de sopa de óleo -água quente Molho -105g de açúcar -90g de ketchup -200g de sumo de ananás -135g de vinagre branco (arroz ou aguardente) meia colher de chá de sal (1/4+1/8 de uma colher de chá americana) -1 colher de sopa de farinha de milho diluída em 4 colheres de sopa de água -50g de água Vegetais: -1/2 pimenta verde -1/2 pimento vermelho -1/2 cebola -200g de pedaços de ananás (enlatados!)
Se quiser preparar a receita com antecedência, sugiro cozinhar o molho, e iniciar a primeira cozedura dos fritos de porco. Depois, no último segundo, termine com a segunda fritada e deite o molho para revestir tudo!
Comece por cortar o porco assado em pedaços adequados para duas mordeduras. Adicionar o molho de soja transparente, vinho chinês, cinco especiarias em pó, bicarbonato e farinha de milho. Partir num local fresco durante pelo menos uma hora.
Verter todos os ingredientes para o molho excepto a farinha de milho e a água.
Adicionar os legumes, pimentos, cebolas e ananás. Colocar em lume brando durante cerca de dez minutos para cozinhar a cebola e os pimentos. Assim, pode cozinhar um pouco mais ou um pouco menos.
Após 10 minutos, adicionar a farinha de milho diluída e os 50g de água se o molho engrossar demasiado.
Deixar cozinhar durante um minuto e desligar o lume. Fazer uma reserva.
Preparar a massa de rosquinha para a carne de porco. Misturar a farinha, a farinha de milho e a clara de ovo.
Adicionar água quente pouco a pouco para obter uma pasta suave. Nem demasiado seco nem demasiado líquido.
Verter esta pasta sobre a carne de porco.
Aquecer óleo num wok ou numa frigideira. Quando o óleo estiver quente, adicionar os pedaços de carne de porco um a um. Não fritar demasiada carne de porco ao mesmo tempo. Cozinhe em dois ou três lotes!
Virar as peças de modo a que fiquem douradas de todos os lados.
Colocar de lado cada vez numa toalha de papel enquanto as outras peças cozinham.
Uma vez tudo cozinhado, deixar o óleo aquecer um pouco mais e depois adicionar tudo de uma só vez. Vamos fritar o porco uma segunda vez para o tornar mais estaladiço! Que bom!
Escorra o óleo da wok para outro recipiente (uma panela vazia) e devolva os pedaços de porco frito à wok, verta o molho doce e ácido sobre as bolachas.
Cozinhar apenas para aquecer o molho. Servir imediatamente com arroz.
