Hace mucho tiempo, casi 10 años, publiqué una tarta de limón y merengue. Esta vez os ofrezco estos cuadraditos de limón con un sabor rico pero simplemente increíblemente cremoso, muy alimonado como a mí me gusta. Al final, es un poco como un rico y mantecoso shortbread cubierto con esta cuajada de limón. Es como la versión americana de nuestras tartas de limón. Una auténtica delicia de color.
Receta de CUADROS DE LIMÓN para un molde de 23 cm:
Pastel de limón azucarado :
165 g de harina
70g de azúcar
150 g de mantequilla semisalada
la cáscara de un limón sin tratar
Crema de limón :
225 g de huevo
165 g de yemas (unas 9-10 yemas, pero es mejor pesarlas)
310g de azúcar
390 g de zumo de limón recién exprimido
ralladura de 3 limones sin tratar
Instrucciones:
Ponga la mantequilla semisalada, el azúcar y la harina en el bol de su robot de cocina o en un bol.
Añadir la ralladura del limón sin tratar.
Mezclar con las yemas de los dedos o con la cuchilla del robot de cocina.
Cuando la masa sea homogénea, dejar de mezclar.
Forrar el molde con papel de hornear. Colocar la masa en el fondo de la manera más uniforme posible sobre el espesor.
Hornear la masa durante 30 minutos a 180°C.
Para la crema de limón: poner los huevos y las muchas yemas en un cazo con el azúcar. Batir para combinar.
Añadir la ralladura de los 3 limones.
Exprimir los limones para obtener la cantidad adecuada de zumo.
Verter el zumo en la sartén, batiendo para combinar. Calentar a fuego lento hasta 77-78°C.
Remover constantemente. A la temperatura deseada, verá que la consistencia cambia drásticamente y se espesa.
Vierta la crema sobre la masa cocida, pero pásela por un colador fino.
Forzar un poco la crema con una espátula. Tendrá una crema muy alimonada, sin ralladura y muy suave.
Agitar un poco la sartén para distribuir la crema.
Cubrir con papel de aluminio.
Hornear de nuevo durante 12 minutos a 175°C. Dejar enfriar con el papel a temperatura ambiente y luego enfriar durante al menos 3 horas. Puedes desmoldar el pastel.
Cortar en trozos pequeños.
Luego, si lo desea, decore con un poco de azúcar glas.
Sírvelas frescas.

Merci Bernard, je n'ai pas résisté à faire ce carré au citron dès que j'ai vu ta recette. C'est délicieux. Le goût citronné est très prononcé. Chez nous, ça a été plébiscité par les adeptes du citron pour le coup. J'ai juste mis une feuille azyme à la place du sucre glace sur le dessus pour le look comme j'en avais sous la main. bonjour Bernard, je suis une adepte de votre site depuis longtemps. j ai fait cette recette un peu modifiée, mais en gardant vos bases. C est delicieux. Comme je n avais pas assez de citron pour le jus j ai compensé avec du rhum, pour le citron non traité que je n avais pas , j ai zesté mes combawa. Ensuite j ai diminué la quantité de sucre en compensant avec un sachet d agar agar. Merci à vous pour vos recettes.
