Hace poco volví de un viaje a Vietnam. No había estado allí durante un año y medio. Y redescubrí estos maravillosos buñuelos crujientes de arroz glutinoso. Ya los había hecho hace 3 o 4 años en mi antigua cocina con la intención de publicarlos, pero me vi envuelta en mil cosas más. Este último viaje me dio la oportunidad y el deseo de ofrecerles mi versión. Su textura es increíble. Muy crujiente por encima y suave por dentro. Todo ello sin un solo gramo de harina, porque la masa exterior está hecha únicamente de arroz glutinoso. Hacerlos es un poco complicado, pero te daré todos los consejos que necesitas para hacerlos en casa como en Vietnam.
Receta para unas 6 rosquillas:
225g de arroz pegajoso
240g de agua
1/2 cucharadita de sal
Broma :
50 g de gambas
50 g de lomo de cerdo
50g de zanahoria
1 diente de ajo pequeño
1 pimiento rojo pequeño
1 cucharadita de azúcar
1 cucharadita de nuoc mâm
1 cebolleta china
pimienta
aceite
Este es el arroz pegajoso.
Pesar los 225g necesarios.
Sumérjase en un gran volumen de agua durante al menos 4 horas o incluso toda la noche.
Al día siguiente, enjuague y escurra el arroz en un colador fino. Ponerlo en una arrocera con los 240g de agua y la sal. Sin una olla arrocera, ponga el arroz y el agua (con sal) en una cacerola. Llevar a ebullición, bajar el fuego y cocinar con una tapa durante unos 20 minutos.
Con la arrocera, pon la tapa y enciende la máquina, ¡ya está!
Una vez terminada la cocción, dejar enfriar con la tapa quitada. De este modo, podrá tocar el arroz sin quemarse. Es muy pegajoso. Con las manos aceitadas, trabajar ligeramente el arroz hasta formar una masa, aproximadamente 30 segundos.
Para el relleno, picar la carne de cerdo y las gambas. Cortar los 50 g de zanahoria, la guindilla (sin las semillas) y el ajo en trozos pequeños.
Vierta 3-4 cucharadas de aceite en un wok (o sartén) a fuego alto. Añadir el ajo, la guindilla, las zanahorias, el cerdo y las gambas.
Cocer durante 5 minutos, removiendo regularmente.
Añadir el azúcar y el nuoc mâm. Añadir pimienta al gusto.
Cocer hasta que se haya evaporado todo el líquido.
Retirar del fuego y añadir la cebolla de verdeo finamente picada en un bol.
¡Todo está listo! Ahora tienes que hacer las bolas…
Lo más fácil es trabajar con un poco de aceite y un trozo de film transparente. Corta un trozo de film y colócalo en la superficie de trabajo. Vierta un poco de aceite sobre la lámina y extiéndala con la punta de los dedos. Dividir el arroz glutinoso en 6 trozos. Coloca una bola sobre el film y extiéndela hasta formar una especie de disco.
Vierta una parte del relleno y comience a cerrar.
Asegúrese de que el relleno no se salga.
Cierra la película de plástico para completar la bola.
Cuando la bola esté perfectamente sellada, colócala sobre otro film transparente aceitado. Haz lo mismo con el resto del arroz y el relleno.
Calentar un wok o una sartén con aceite. Poner dos o tres pellets y no tocar nada más.
Si se trata de girarlas, se pegarán al instrumento que se esté utilizando. Deja que coloreen. Una vez dorados, no se pegarán en absoluto. La corteza debe ser sólida antes de poder moverlas en el wok.
Y la mejor manera de darles la vuelta después es utilizar palillos de madera.
Esta vez puedes devolverlos sin preocuparte. Los buñuelos deben estar bien coloreados y crujientes.
Déjelos enfriar durante 10 minutos antes de servirlos con una salsa de chile.
