لقد عدت مؤخرًا من رحلة إلى فيتنام. لم أكن هناك منذ عام ونصف. وأعدت اكتشاف هذه الكعك اللزج المقرمش الرائع. كنت قد صنعتها منذ 3-4 سنوات في مطبخي القديم بقصد نشرها ، لكنني وقعت في آلاف الأشياء الأخرى. أعطتني هذه الرحلة الأخيرة الفرصة والرغبة في تقديم نسختي لك. نسيجهم مذهل. مقرمشة جدا من الأعلى و طرية من الداخل. كل هذا بدون غرام طحين ، لأن العجين الخارجي مصنوع فقط من الأرز اللزج! إن صنعها أمر صعب بعض الشيء ، لكنني سأقدم لك كل النصائح لإنجاحها في المنزل كما في فيتنام.
وصفة لحوالي 6 دونات:
225 جرام أرز لزج
240 جرام ماء
1/2 ملعقة صغيرة ملح
اتصال مزعج :
50 جرام روبيان
50 جرام لحم الخنزير الخاصرة
50 جرام جزر
1 فص ثوم صغير
1 فلفل أحمر صغير
1 ملعقة صغيرة سكر
1 ملعقة صغيرة من nuoc mam
1 بصل أخضر صيني
فلفل
نفط
هنا أرز دبق.
تزن 225 جرام اللازمة.
نقع في كمية كبيرة من الماء لمدة 4 ساعات على الأقل أو حتى بين عشية وضحاها.
في اليوم التالي ، اشطفه ، ثم اترك الأرز يُصفى في مصفاة جيدة. ضعه في طنجرة أرز مع 240 جرام من الماء والملح. بدون قدر طهي الأرز ، ضعي الأرز والماء (المملح) في قدر. يُغلى المزيج ، ويُخفف النار ويُترك على نار خفيفة مع غطاء لمدة 20 دقيقة.
باستخدام قدر الأرز ، ضع الغطاء وابدأ تشغيل الجهاز ، هذا كل شيء!
عند الانتهاء من الطهي ، اتركي النار تبرد مع الغطاء. يمكنك بعد ذلك لمس الأرز دون حرق نفسك. انها لزجة جدا! بأيدي مدهونة بالزيت ، حرّك الأرز برفق في كتلة ، حوالي 30 ثانية.
للحشوة يقطع لحم الخنزير والروبيان. نقطع 50 غ من الجزر والفلفل الحار (بدون البذور) والثوم إلى قطع صغيرة.
صب 3-4 ملاعق كبيرة من الزيت في مقلاة على نار عالية. يضاف الثوم والفلفل الحار والجزر ولحم الخنزير والروبيان.
يُطهى لمدة 5 دقائق مع التحريك بانتظام.
يضاف السكر nuoc mâm. الفلفل حسب ذوقك.
اتركه يطهى حتى يتبخر كل السائل.
نسكب النار في وعاء ونضيف الخضار المفروم ناعما من البصل الأخضر.
كل شئ جاهز ! الآن علينا أن نصنع الكرات …
أسهل طريقة هي العمل بقليل من الزيت وقطعة من فيلم مطاطي. قطع قطعة من الفيلم ، ووضعها على سطح العمل. صب القليل من الزيت على الفيلم ووزعه بأطراف أصابعك. قسّم الأرز اللزج إلى 6. ضع كرة على الفيلم وانشرها على شكل قرص.
صب القليل من الحشو ثم ابدأ في الإغلاق.
احذر من أن الحشو لا يخرج.
أغلق الفيلم البلاستيكي لإتقان الكرة.
عندما تكون الكرة محكمة الغلق تمامًا ، ضعها على فيلم مطاطي مزيت آخر. افعل الشيء نفسه مع باقي الأرز والحشوة.
سخني مقلاة أو مقلاة زيت. ضع زلابتين أو ثلاث زلابية ولا تلمس أي شيء.
إذا بدأت في الرغبة في قلبها ، فسوف يلتزمون بالأداة المستخدمة. دعهم يلونون. بمجرد أن تصبح ذهبية اللون ، لن تلتصق على الإطلاق. يجب أن تكون القشرة صلبة قبل أن تتمكن من تحريكها في المقلاة.
