Hace más de 10 años, viví un tiempo en El Cairo, Egipto. Hay un montón de especialidades de allí que pienso compartir con vosotros algún día. Este es uno de ellos. Parece que visualmente guacamole, pero no tiene nada que ver. Se trata de judías verdes trituradas con especias y hierbas, pero también con cebolla frita y aceite de oliva. Una delicia que se disfruta con pan, un poco como el hummus o el babaganoush. He buscado una forma sencilla de prepararlo sin tener que pasar horas en él. Aquí utilizo cebollas fritas ya preparadas, que se pueden encontrar fácilmente en el supermercado. Depende de ti si quieres freírlos tú mismo…
Receta de bissara:
-500g de judías verdes (peso cocido, sino 250g de judías verdes secas para cocinar)
-100g de aceite de oliva
-75g de cebollas fritas
-2 dientes de ajo pequeños
-3-4 ramitas de perejil plano
-3-4 ramitas de cilantro
-1 cucharadita de cilantro en polvo
-1 cucharadita de comino en polvo
-1/2 cucharadita de sal
Cocer las judías. Puedes usar las secas que dejas en remojo toda la noche. A continuación, deben cocinarse según las instrucciones del envase y retirar la piel. Si no, ¡también puedes encontrarlos congelados ya pelados! Este es el que yo usé y los cociné durante 5 minutos desde que volvieron a hervir.
Escurrir y enjuagar en agua fría. A continuación, sécalas en papel de cocina o en un paño limpio.
Ponerlos en una batidora con la sal y las cebollas fritas. Puedes freír tú mismo las cebollas frescas en rodajas, pero las cebollas fritas son muy fáciles de encontrar en el supermercado. ¡Irá más rápido!
Añadir el cilantro, el ajo y el perejil.
Mezclar bien durante al menos 2 minutos. A continuación, vierta el aceite de oliva.
No olvides las especias: cilantro en polvo y comino en polvo.
Una última pasada por la batidora y ya está.
