En Brasil, principalmente en las familias, más raramente a la venta en la calle, se encuentra esta receta de «beijos de mulata», literalmente los besos de la mestiza. «Mulata» se refiere a una chica mestiza y, más generalmente, a una chica guapa en portugués brasileño. El color dorado de estos dulces tras la fritura y el baño de chocolate les dan su nombre. Una receta muy sencilla que cambia de nuestros buenos y viejos pedos de monja (menos glamurosos en el nombre debo admitir, pero también me gusta…). Se trata de pequeños buñuelos bañados en una espesa salsa de chocolate y luego enrollados en coco. En Brasil, el coco seco es más grueso que el nuestro, pero eso no cambia el sabor.
Receta de «beijos de mulata»:
-3 amarillo
-75ml (g) de cachaça (o ron blanco)
-110g de azúcar
-3/4 cucharadita de levadura en polvo
-15g de mantequilla
-400 a 450g de harina
Salsa de chocolate:
-60g de chocolate en polvo
-60g de azúcar (estamos en Brasil, ¡nos gusta el azúcar!)
-15g de leche
Coco seco rallado
Aceite para freír
Mezclar las yemas y añadir la cachaça. Así que me anticipo a su pregunta: sí, el alcohol se evapora, ¡sólo queda el sabor! Está presente, ciertamente, ese es el objetivo, pero está ahí para aportar su sabor y un crujido porque ¡se evapora!
Añadir el azúcar en polvo.
Polvo de hornear. Puse una cucharadita en el fondo. Siempre con mis cucharas americanas.
A continuación, vierta finalmente la harina. Añadirlo poco a poco para sentir la cantidad que necesita la masa. Debe tener la consistencia de la masa de pan.
Debe «sentir» la necesidad de harina en la masa.
La masa no debe estar ni demasiado blanda ni demasiado dura.
Añadir la mantequilla (a temperatura ambiente) y amasar para incorporarla.
Ahora es el momento de amasar durante quince minutos a mano o en un procesador de alimentos.
Una vez que la masa esté bien amasada, dejarla reposar durante una hora en film transparente para que no se seque. Hacer bolas de unos 10 g. Puedes pesar los primeros y luego hacer los siguientes «a la vista».
Freír en un baño de aceite caliente. Asegúrate de tener suficiente aceite, porque si las albóndigas no están sumergidas, se abrirán y se romperán.
Deja que los buñuelos (bien curados) se enfríen unos instantes, mientras cocinas el resto de los buñuelos y preparas la salsa de chocolate de todas formas…
Para la salsa, mezclar el chocolate en polvo y el azúcar.
Añade la leche. Debe ser una salsa bastante espesa.
Sumergir cada «beijo» en el chocolate.
Escurrir bien con un tenedor.
A continuación, páselas por el coco. Es importante saber que en Brasil el coco es mucho más grueso que el que tenemos aquí. Pero funciona igual de bien con el nuestro.
