No Brasil, principalmente em famílias, mais raramente à venda na rua, é esta receita de “beijos de mulata”, literalmente os beijos da mestiza. “Mulata” refere-se a uma rapariga mestiça e, mais geralmente, a uma bela rapariga em português brasileiro. A cor dourada destes doces após a fritura e o banho de chocolate dão-lhes o seu nome. Uma receita muito simples que muda dos nossos bons e velhos peidos de freira (menos glamoroso no nome devo admitir, mas também gosto dela…). Estes são pequenos bolinhos fritos mergulhados num molho de chocolate grosso e depois enrolados em coco. No Brasil, o coco seco é mais espesso que o nosso, mas isso não muda realmente o sabor!
Receita de “beijos de mulata”:
-3 amarelo
-75ml (g) cachaça (ou rum branco)
-110g de açúcar
-3/4 colher de chá de fermento em pó
-15g de manteiga
-400 a 450g de farinha
Molho de chocolate:
-60g de chocolate em pó
-60g de açúcar (estamos no Brasil, gostamos de açúcar!)
-15g de leite
Coco ralado seco
Óleo para fritar
Misturar as gemas e adicionar a cachaça. Por isso antecipo a sua pergunta: sim, o álcool evapora, só resta o sabor! Está presente, certamente, esse é o objectivo, mas está lá para trazer o seu sabor e um crocante porque se evapora!
Acrescentar o açúcar em pó.
Pó de fermento. Coloco uma colher de chá cheia no fundo. Sempre com as minhas colheres americanas.
Depois, por fim, deitar a farinha. Acrescentar pouco a pouco para sentir quanto a massa precisa. Deve ter a consistência da massa de pão.
É preciso “sentir” a necessidade de farinha na massa.
A massa não deve ser demasiado mole ou demasiado dura.
Acrescentar a manteiga (à temperatura ambiente) e amassar para a incorporar.
Agora é tempo para uns bons quinze minutos de amassar à mão ou num processador de alimentos!
Quando a massa estiver bem amassada, deixá-la descansar durante uma hora em película aderente para evitar que seque. Fazer bolas de cerca de 10g. Pode-se pesar os primeiros e depois fazer os seguintes “à vista”.
Fritar num banho de óleo quente. Certifique-se de que tem óleo suficiente, porque se os bolinhos não estiverem submersos, abrir-se-ão e partir-se-ão.
Deixe os bolinhos fritos (bem curtidos) arrefecer por alguns momentos, enquanto cozinha o resto dos bolinhos fritos e prepara o molho de chocolate de qualquer maneira…
Para o molho, misturar o chocolate em pó e o açúcar.
Acrescentar o leite. Deve ser um molho bastante espesso.
Mergulhar cada “beijo” no chocolate.
Drenar bem com um garfo.
Depois enrolá-los no coco. É importante saber que no Brasil o coco é muito mais espesso do que o que temos aqui. Mas funciona igualmente bem com o nosso!
