Aquí hay una deliciosa opción para acompañar el pollo a la mantequilla que sugerí. Este arroz es perfecto y tiene múltiples sabores. Hice esta receta por instinto, inspirándome mucho en el biryiani de Manju, ¡un plato que publicaré pronto! Mientras tanto, este arroz con anacardos y pasas se puede mejorar con otros frutos secos: albaricoques, almendras laminadas, etc.
Receta para 4 a 6 personas:
-400g de arroz basmati de grano largo -80g de anacardos crudos -60g de pasas de Corinto -2 cebollas -1/2 manojo de cilantro -sal pimienta -60 g de ghee (o mantequilla clarificada) -2 hojas de laurel indio (¡opcional si no se dispone de ellas!) -4 cápsulas de cardamomo -2 palitos de canela -2 cucharadas de leche -un poco de kasuri methi (opcional)
Aclarar 100 g de mantequilla. Basta con derretir la mantequilla y retirar sólo la parte superior. ¡No cojas el suero del fondo! Puedes simplificar la tarea utilizando ghee, una mantequilla india ya clarificada, que de todas formas es más adecuada para la receta.
Poner 20 g de ghee en una sartén pequeña y cocer a fuego lento las pasas sultanas y los anacardos crudos.
Las uvas se hincharán y las nueces se colorearán.
Reservar las nueces y las uvas cuando las nueces estén bien coloreadas.
Dejar el ghee en la sartén y añadir 2 cucharadas. Cortar las cebollas en rodajas no muy grandes.
Dejar cocer a fuego bastante fuerte.
Las cebollas tomarán color.
Devolverán algo de agua, pero acabará evaporándose.
Queremos llegar a la etapa en que las cebollas se vuelven crujientes. El proceso completo dura unos 20 minutos. Tampoco querrás quemarlos.
Cuando las cebollas estén crujientes, apártalas.
Poner una buena cantidad de agua en una cacerola grande a calentar. Añadir la hoja de laurel indio, la canela, el cardamomo, la sal y dos cucharadas de ghee.
Cuando el agua hierve, se añade el arroz lavado.
Cocer el arroz como se indica en el paquete, quitando 2 o 3 minutos de cocción. Debe estar al dente, ya que se cocinará de nuevo.
Escurrir bien el arroz, retirar las hojas, las cápsulas y los palos.
Añadir 3/4 de las cebollas, los anacardos (reservando algunos para decorar) y las pasas.
Mezclar bien, añadir leche, 2 o 3 cucharadas de ghee.
Añadir el cilantro picado.
Mezclar bien, cocinar durante 5 minutos a fuego lento para aflojar los granos y añadir un poco de kasuri methi (¡opcional!).
Servir decorado con uvas, anacardos, cebollas y cilantro
