Aqui está uma deliciosa opção para acompanhar o frango com manteiga que sugeri. Este arroz é perfeito e tem múltiplos sabores. Fiz esta receita por instinto, inspirando-me muito no biryiani de Manju, um prato que vou colocar em breve! Entretanto, este arroz com castanhas de caju e uvas passas pode ser melhorado com outros frutos secos: damascos, amêndoas em flocos, etc.
Receita para 4 a 6 pessoas:
-400g de arroz basmati de grãos longos -80g de castanhas de caju cru -60g de sultanas -2 cebolas -1/2 ramo de coentros -sal, pimenta -60g de ghee (ou manteiga clarificada) -2 folhas de louro indiano (opcional se não estiver disponível!) -4 cápsulas de cardamomo -2 canelas em pauzinhos -2 colheres de sopa de leite -a pequena kasuri methi (opcional)
Esclarecer 100g de manteiga. Basta derreter a manteiga e depois remover apenas a parte de cima. Não leve o soro de leite para o fundo! Pode simplificar a tarefa utilizando ghee, uma manteiga indiana que já foi clarificada, que é mais adequada para a receita de qualquer forma!
Colocar 20g de ghee numa panela pequena e cozer as sultanas e as castanhas de caju cruas em lume brando.
As uvas vão inchar e as nozes vão ficar coloridas.
Ponha de lado as nozes e as uvas quando as nozes estiverem bem coloridas.
Deixar o ghee na frigideira e adicionar 2 colheres de sopa. Cortar as cebolas em fatias não muito grossas.
Deixar cozinhar em lume relativamente alto.
As cebolas ficarão coloridas.
Eles devolverão alguma água, mas esta acabará por evaporar.
Queremos chegar ao palco onde as cebolas se tornam crocantes. Todo o processo demora cerca de 20 minutos. Também não os queres queimar!
Quando as cebolas estiverem estaladiças, ponha-as de lado.
Colocar uma boa quantidade de água numa grande caçarola para aquecer. Adicionar a folha de louro indiano, canela, cardamomo, sal e duas colheres de sopa de ghee.
Quando a água ferver, adicionar o arroz lavado.
Cozinhar o arroz como indicado no pacote, retirando 2 ou 3 minutos de tempo de cozedura. Deve ser al dente, pois irá cozinhar novamente.
Drenar bem o arroz, retirar as folhas, as cápsulas e os paus.
Acrescentar 3/4 das cebolas, as castanhas de caju (guardando algumas para decoração) e as passas de uva.
Misturar bem, adicionar leite, 2 a 3 colheres de sopa de ghee.
Acrescentar os coentros picados.
Misturar bem, cozinhar durante 5 minutos em lume brando para soltar os grãos e adicionar um pouco de kasuri methi (opcional!!).
