He aquí una receta marroquí de la región de Agadir. Es una pequeña maravilla de sencillez y gusto. Es una pasta suave hecha de almendras trituradas con aceite de argán y ligeramente endulzada con miel. Tradicionalmente se hace con una piedra que muele las almendras muy finamente. Con una batidora se puede conseguir casi la misma textura. No será tan fino (el molido a la piedra da un amlou incomparable) pero el resultado es absolutamente delicioso. Un poco de amlou por la mañana sobre el pan y puedes seguir hasta el almuerzo. El aceite de argán da una sensación de boca muy suave y aterciopelada y el toque de miel está ahí para endulzarlo todo.
Para 550g de amlou:
350 g de almendras
120 g (130 ml) de aceite de argán
80 g de miel (o más al gusto)
Poner las almendras a tostar en el horno a 190°C. Colóquelos en una bandeja de horno forrada con papel de hornear.
Asarlas de 15 a 20 minutos, sin dejar de vigilarlas. A mí me gustan asadas, pero puedes asarlas a tu gusto.
Esto es aceite de argán y miel.
Compré estos dos productos en Apia, en Rabat, en el número 44 de la calle Oukaïmeden. Una gran tienda ecológica con una amplia selección de miel y aceites. Es necesario tomar el aceite de argán para la alimentación y no equivocarse con el reservado para los cuidados cosméticos.
También tomé miel de eucalipto, una de las más baratas, ya que es muy adecuada para hacer amlou.
Una vez tostadas las almendras, dejarlas enfriar a temperatura ambiente. A continuación, colóquelos en el bol de su batidora. Normalmente se hace con una piedra, pero en casa no siempre es práctico.
Empieza a molerlas y luego añade el aceite.
Continúe triturando, añadiendo el aceite a medida que avanza.
Muy rápidamente, el amlou se forma y se vuelve casi líquido.
A continuación, añada la miel. Puedes añadir más o menos. En general, prefiero el amlou que no es demasiado dulce.
Una última pasada por la batidora y ya está listo. Puede verterlo en un plato bonito para servirlo o guardarlo en un tarro de mermelada. Si el aceite se levanta después de varios días, basta con remover para obtener un aceite homogéneo.
