Aqui está uma receita marroquina da região de Agadir. É uma pequena maravilha de simplicidade e sabor. É uma pasta suave feita de amêndoas esmagadas com óleo de argan e ligeiramente adoçada com mel. É feito tradicionalmente com uma pedra que mói as amêndoas de forma muito fina. Com um liquidificador, pode-se conseguir quase a mesma textura. Não será tão fino (moer pedra dá um amlou incomparável) mas o resultado é absolutamente delicioso. Um pouco de amlou de manhã em pão e pode continuar até ao almoço. O óleo de argan dá uma sensação de boca aveludada muito suave e o toque do mel está lá para adoçar tudo.
Por 550g de amlou:
350g de amêndoas
120g (130ml) de óleo de argan
80g de mel (ou mais a gosto)
Colocar as amêndoas para assar no forno a 190°C. Colocá-los sobre um tabuleiro forrado com papel vegetal.
Grelhá-los durante 15 a 20 minutos, mantendo-os debaixo de olho. Eu gosto deles assados, mas pode assá-los ao seu gosto.
Isto é óleo de argão e mel.
Comprei estes dois produtos no Apia, em Rabat, no 44, rue de l’Oukaïmeden. Uma grande loja orgânica com uma vasta selecção de mel e óleos. É necessário levar o óleo de argão para a alimentação e não cometer um erro com o reservado aos cuidados cosméticos.
Também levei mel de eucalipto, um dos mais baratos, pois é muito adequado para fazer amlou.
Uma vez torradas as amêndoas, deixá-las arrefecer até à temperatura ambiente. Depois coloque-os na tigela do seu liquidificador. Normalmente isto é feito com uma pedra, mas em casa nem sempre é prático!
Comece a moê-los e depois adicione o óleo.
Continuar a moer, adicionando o óleo à medida que se vai.
Muito rapidamente, o amlou forma-se e torna-se quase líquido.
Em seguida, adicionar o mel. Pode acrescentar mais ou menos. Em geral, prefiro amlou que não seja demasiado doce.
Uma última explosão no misturador e está pronto! Pode despejá-lo num bom prato para o servir ou guardá-lo num frasco de compota. Se o óleo subir após vários dias, basta agitar para obter um óleo homogéneo.
