Una receta pequeña, sin pretensiones y, sobre todo, muy saludable, pero no por ello menos deliciosa. Hice estas judías en Rabat con mi amiga Touria, gracias a la receta de Kenza. Estas sabrosas judías son perfectas para acompañar un plato. Sólo recuerda ponerlos en remojo el día anterior. Esta es una sencilla receta de alubias que se come en las familias de Marruecos. Evidentemente, hay variaciones familiares o regionales. De hecho, también deben hacerse de forma casi idéntica en el resto del Magreb, así que no dude en añadir sus toques personales en los comentarios.
Receta para 4 personas:
250 g de judías blancas
2 dientes de ajo
1 cebolla roja
300g de tomates
un pequeño manojo de cilantro
un pequeño manojo de perejil plano
3 hojas de laurel
aceite de oliva
sal, pimienta negra
Poner las alubias blancas en remojo toda la noche.
Al día siguiente, escúrralos, páselos por agua fría y vuelva a dejarlos escurrir bien. Lavar también el cilantro y el perejil de hoja plana.
Pelar y picar finamente la cebolla roja.
Pelar los tomates y cortarlos en trozos.
Vierta 4 cucharadas de aceite de oliva en una cazuela.
Cocinar durante 3-4 minutos
Añadir los tomates y el ajo picado.
Dejar cocer, removiendo de vez en cuando para que se evapore el jugo del tomate.
El conjunto debe compotar. Si lo desea, puede añadir una cucharada de pasta de tomate doble.
Picar las hierbas finamente.
Viértalas en la cazuela, junto con las judías blancas. Verter agua hasta 3 cm por encima de las judías. Sal a tu gusto.
Añadir las hojas de laurel. Cerrar la olla y llevar a ebullición. Cuando salga el vapor a presión, deje 30 minutos de cocción. Sin una olla a presión, cierre con la tapa de su olla y cocine durante una buena hora.
Las judías están casi listas.
Ahora dejar cocer sin tapa hasta alcanzar la consistencia deseada. Puede tener una salsa más líquida o, por el contrario, más cremosa.
