Uma receita pequena, despretensiosa e acima de tudo muito saudável, mas ainda assim deliciosa. Fiz estes feijões em Rabat com o meu amigo Touria, graças à receita de Kenza. Estes feijões saborosos são perfeitos para acompanhar um prato. Basta lembrar de os molhar no dia anterior. Esta é uma receita simples de feijão que é consumido por famílias em Marrocos. Existem obviamente variações familiares ou regionais. De facto, também devem ser feitas de forma quase idêntica no resto do Magrebe, por isso não hesite em acrescentar os seus toques pessoais nos comentários!
Receita para 4 pessoas :
250g de feijão branco
2 dentes de alho
1 cebola vermelha
300g de tomate
um pequeno grupo de coentros
um pequeno molho de salsa plana
3 folhas de louro
azeite de oliva
sal, pimenta preta
Mergulhar os feijões brancos de um dia para o outro.
No dia seguinte, drená-los, pô-los debaixo de água fria e depois deixá-los a drenar bem novamente. Lavar também os coentros e a salsa de folha plana.
Descascar e cortar finamente a cebola vermelha.
Descascar os tomates e cortá-los em pedaços.
Verter 4 colheres de sopa de azeite para uma caçarola.
Cozinhar durante 3-4 minutos
Adicionar os tomates e o alho finamente picado.
Deixar cozinhar, mexendo ocasionalmente para que o sumo de tomate evapore.
Tudo isto tem de compota. Se desejar, pode adicionar uma colher de sopa de pasta dupla de tomate.
Cortar finamente as ervas.
Deite-os na caçarola, juntamente com os feijões brancos. Verter água até 3cm acima do feijão. Acrescentar sal a gosto.
Adicionar as folhas do louro. Fechar a panela e deixar ferver. Quando o vapor sair sob pressão, aguarde 30 minutos para cozinhar. Sem uma panela de pressão, feche com a tampa da sua panela e cozinhe durante uma boa hora.
Os feijões estão quase prontos.
Agora deixar cozinhar sem tampa até se atingir a consistência desejada. Pode ter um molho mais líquido, ou pelo contrário, mais cremoso.
