Les « Xia long bao » sont des petits raviolis chinois cuits à la vapeur, avec une farce au porc très juteuse qui est la même que les brioches de Shanghai.
Commencer par mettre la viande avec les 30g d’eau jusqu’à ce que la viande l’ait absorbée complétement. Puis préparer la farce en mélangeant bien tous les ingrédients.
Sur un plan de travail, mettre la farine, y creuser un puits et y verser l’eau.
Commencer à pétrir la pâte avec la paume de la main, en pliant et rabattant la pâte pendant cinq minutes.
Au bout de 5 minutes, utiliser un rouleau pour continuer de travailler la pâte, en étalant en longueur. Plier cette bande en trois, la tourner de 90° puis étaler de nouveau en bande. Continuer cette même opération pendant encore 5 minutes.
Diviser en trois boudins, puis chaque boudin en douze morceaux égaux de pâte.
Aplatir chaque morceaux de pâte avec la paume de la main puis au rouleau.
Mettre une cuillerée de pâte dans chaque disque ainsi formé, puis fermer chaque ravioli. Je pense que la photo est sans doute moins douloureuse qu’une longue explication sur le pliage.
Poser les raviolis dans un panier en bambou puis cuire à la vapeur pendant 10 minutes.
Les « Xia long bao » se servent avec une sauce (moitié vinaigre balsamique, moitié sauce de soja, avec un peu d’huile de sésame et de tabasco) et surtout avec baguettes ET cuiller pour récupérer le jus qui se trouve à l’intérieur!
