Je sais que c’est l’été et que c’est plutôt une recette de Noël, mais que voulez-vous, dès que j’ai une recette en tête, je vais tout de suite en cuisine pour la faire. Surtout que j’ai eu de belles journées de pluie qui ont été parfaites pour cela ! Je continue mon exploration du turron, après le turron de Alicante (recette ICI), du turron à 78% d’amandes (recette LÀ) et du turron de Jijona (dans mon livre ‘les desserts de Bernard »), voici le turron au jaune d’œuf brûlé. Une petite merveille de simplicité et de saveur. Le seul ingrédient plus difficile à trouver: le sirop de glucose qui évite la cristallisation du sucre. Mais aujourd’hui on le trouve dans les grands magasins. La preuve, j’ai fait ce turron en Bretagne avec les produits du magasins d’à côté !
Versez le sucre, le sirop de glucose (qui évitera la recristallisation du sucre) et un peu d’eau dans une petite casserole. Il en faut juste assez pour imbiber le sucre. Faites chauffer sur feu doux.
Pendant ce temps, dans un bol, mélangez la poudre d’amande, les jaunes (sur la photo il y en a deux, mais j’en ai ajouté un plus tard) et l’extrait de vanille.
Vous pouvez mélanger à la main ou au KitchenAid.
Portez le sirop à 130°C. Il faudra vérifier avec un thermomètre. Versez sur la « pâte d’amande » tout en mélangeant.
Comme il y a peu de sirop, il faut bien tout récupérer. Pour cela j’ai reversé (hors du feu bien entendu) la pâte dans la casserole pour bien racler le sirop et l’incorporer.
Préparez un cadre de 8X16 cm. Mettez une feuille de papier sulfurisé dans un sens, et une autre en perpendiculaire. Il faut que le papier dépasse bien. Posez le tout sur un tapis de cuisson sur une plaque. Versez l’intégralité de la pâte d’amande dans le cadre chemisé. Étalez le plus uniformément possible.
L’intérêt d’avoir fait dépasser le papier? Vous pouvez maintenant le rabattre pour bien enfermer le turron. Pressez bien pour uniformiser et aplanir le turron.
Laissez figer maintenant pendant au moins 48h. Après ce temps, enlevez-le de son cadre et posez-le sur une grille.
Saupoudrez généreusement de sucre glace avec un petit tamis ou un passe-thé.
Avec un chalumeau (ou même un fer à crème catalane), caramélisez la surface.
Vous pouvez bien sûr le caraméliser un peu moins.
Retournez le turron et faites la même opération de l’autre côté.
Voilà ! Vous pouvez maintenant le garder un long moment. Mettez-le à l’abri de l’air dans une boite ou un petit sac congélation. Le mieux serait de le mettre sous vide et de le laisser pendant quelques jours pour développer ses saveurs et le caramel va refondre et la couche légèrement brûlée va s mélanger au reste. Ou alors le manger le soir même ! C’est ce que j’ai fait après tout !
