Placez les amandes effilées, le sucre et la farine dans un bol.
Ajoutez les blancs d’œuf, mélangez bien, puis versez le beurre fondu.
Préchauffez le four à 175°C. Prélevez une cuillerée à soupe de pâte pour chaque tuile et déposer 6 tuiles sur une plaque garnie de papier sulfurisé.
Maintenant l’étape la plus longue, va être d’écraser chaque tuile avec une fourchette. Il faut les étaler le plus finement possible en leur donnant une forme ovale.
On peut voir sur la photo à quel point j’écrase les tuiles !
Ce qui devrait nous amener à ça.
Il faut maintenant les passer au four pendant en gros 12 à 15 minutes. Mais tout dépend de la puissance du four utilisé. Il faut de toute façon rester à proximité du four pour surveiller la cuisson des tuiles. Elles doivent être uniformément dorées. Conseil de Bernard: je déconseille vivement la cuisson simultanée de plusieurs plaques. Les professionnels peuvent le faire car ils ont des fours à chaleur pulsée où chaque endroit du four a la même température, mais nos fours traditionnels à chaleur tournante n’ont pas cet avantage. Il faut donc y aller plaque après plaque. Décollez à la spatule les tuiles assez rapidement car elles refroidissent très vite (et donc durcissent). Il faut vite leur donner leur forme définitive avant qu’elles ne soient cassantes !
Voilà enfin avec quoi je leur donne leur forme. Un manche à balai entre deux chaises! Bien évidemment on peut les mettre sur un rouleau à pâtisserie ou des bouteilles mais l’avantage du manche est que je peux mettre les 6 tuiles en même temps sur le même support! Le seul danger est la présence de rôdeurs dans le coin. Un accident est si vite arrivé !
Il ne reste plus qu’à les consommer rapidement ou alors à les placer dans une boîte hermétique. Elle craignent plus que tout l’humidité.
Les tuiles sont divines avec des glaces ou une mousse au chocolat !
