L’automne est vraiment ma saison préférée. Je suis un vrai dingue de noix et je vous avais déjà proposé des tartes aux noix par le passé, mais j’avais envie cette fois d’une tourte. Et quoi de mieux pour fêter cette magnifique saison qu’une « tuorta da nusch », cette fameuse tourte aux noix de l’Engadine dans les Alpes Suisses? Délicieuse pour le goûter, je ne résiste pas longtemps devant une belle part.
Préparez la pâte. Mettez le beurre, le sucre dans un récipient.
Mélangez jusqu’à avoir une sorte de crème. Ajoutez l’œuf et mélangez de nouveau.
Versez la farine et mélangez jusqu’à avoir une pâte homogène. Ne mélangez pas trop, arrêtez quand la pâte s’agglomère.
Divisez la pâte en deux pâtons, l’un plus petit que l’autre. Mettez sous film étirable au frais.
Pendant ce temps, versez le sucre, le sirop de glucose, le sel et suffisamment d’eau pour imbiber le sucre.
Portez à ébullition.
Au fur et à mesure, le sucre va se colorer. Vous pouvez mélanger sans souci car il y a le sirop de glucose qui empêche la cristallisation du sucre.
Quand le caramel est bien ambré, ajoutez la crème épaisse entière réchauffée. Faites attention à la vapeur très chaude.
Mélangez bien et reportez le tout à 114°C.
Quand cette température est atteinte, versez les 30g de miel. Mélangez et coupez le feu.
Coupez les noix grossièrement.
Versez dans le caramel (feu éteint).
Transvasez cette délicieuse mixture dans un récipient.
Quand la pâte est fraiche, étalez-la sur un plan de travail fariné. Mettez la plus grande pâte dans votre moule ou votre cercle (graissé au préalable). Faites en sorte d’avoir un bel angle droit avec le fond du cercle ou moule. Dans le cas d’un cercle, posez-le sur un donc garni de papier sulfurisé ou d’un tapis de cuisson.
Versez l’intégralité du caramel aux noix.
Recouvrez avec la pâte plus petite.
Coupez la pâte pour n’avoir que la taille du moule.
Scellez la pâte avec une fourchette sur tout le pourtour. Sans cela, le caramel sortira.
Piquez également la pâte.
Faites cuire 50 minutes à 175°C. Le dessus doit être bien doré.
Décerclez la tourte aux noix. Pour la couper parfaitement, je la laisse refroidir totalement, mais je la déguste à température ambiante. Le caramel aura la consistance idéal !
