Je vous propose aujourd’hui une alternative à la tortilla classique. De la tomate, des poivrons rouges, quelques gouttes de tabasco, un soupçon de betteraves, cette tortilla rouge passion se mangera en apéritif. Je la trouve parfaite pour accompagner mon Gazpacho Alvalle. Avec les beaux jours, on peut tout préparer à l’avance pour un pique nique très gourmand et frais!
Mixer les betteraves avec une cuillerée à soupe d’eau.
Verser la purée sur les pommes de terre.
Laisser reposer au frais pendant une heure.
Remplir à moitié une petite poêle d’huile d’olive. Mettre sur feu doux à modéré et ajouter les pommes de terre sans le jus de betteraves. Laisser mijoter pendant une bonne vingtaine de minutes jusqu’à ce que les pommes de terre soient tendres.
Pendant ce temps, battre les oeufs avec le double concentré de tomates.

Ajouter aux oeufs battus.
Quand les pommes de terre sont bien tendres, les enlever de l’huile.

Mélanger délicatement sans briser les pommes de terre.
Se débarrasser de l’huile de la poêle en en laissant l’équivalent de deux cuillerées à soupe.
Ajouter le mélange dans la poêle sur feu doux.
Laisser cuire doucement. Quand le dessus commence à être cuit, poser un couvercle sur la poêle. Retourner le tout, démouler puis reposer dans la poêle de l’autre côté.
Laisser cuire de nouveau quelques minutes jusqu’à ce que le dessous soit cuit.
Servir la tortilla coupée en morceaux et servir avec un verre de Gazpacho Alvalle. On peut aussi ajouter quelques petits morceaux de poivrons sur le Gazpacho.
