La tortilla espagnole est une omelette épaisse aux pommes de terre, souvent agrémentée d’oignons. C’est un plat délicieux typique et populaire de ce pays. Je vous donne la recette de base, très simple à faire, en collant au plus près de la tradition. La tortilla est souvent accompagnée de salade pour le diner ou le déjeuner, mais se déguste aussi comme tapas dans les bars, telle quelle ou alors coupée en cubes sur un morceau de pain…
On peut bien sûr s’aider d’une mandoline, mais cela fait beaucoup de vaisselle pour 3 pommes de terre!
Dans une poêle de 20cm de diamètre , mettre 25cl d’huile d’olive (oui c’est beaucoup mais c’est juste pour cuire les pommes de terre et le demi oignon). Chauffer sur feu modéré à doux. Ajouter les gousses d’ail.
Quand l’ail commence à faire des bulles, ajouter les pommes de terre.
Laisser cuire sur feu doux pour cuire les pommes de terre mais sans les dorer. Laisser cuire 5 à 10 minutes.
Hacher finement le demi oignon.
Puis l’ajouter aux pommes de terre.
Laisser cuire de nouveau le tout (toujours sur feu doux).
Mettre les oeufs dans un grand bol.
Les fouetter à la fourchette, puis les saler.
Quand les pommes de terre sont cuites, (la chair est tendre mais non dorée), les enlever avec une écumoire, bien les égoutter…Ne pas oublier d’enlever les gousses d’ail!
Puis les ajouter aux oeufs battus.
Bien mélanger car les oeufs vont très légèrement cuire avec la chaleur des pommes de terre.
Enlever l’huile de la poêle en en laissant une petite quantité (une ou deux cuillerées à soupe). Laisser chauffer sur feu modéré.
Verser la préparation dans la poêle.
Commencer à mélanger comme des oeufs brouillés avec une cuiller en bois.
Laisser cuire avec un couvercle. Mélanger de temps en temps l’intérieur de la tortilla en laissant cuire le bord. Quand l’extérieur commence à dorer, placer une assiette ou un plat plat (!!) sur la poêle.
Retourner d’un coup la poêle.
Puis transvaser délicatement la tortilla de nouveau dans la poêle.
Laisser cuire l’autre côté en rabattant le bord sous la tortilla.
Quand la tortilla est cuite, mettre sur un plat de service et déguster chaud ou froid en apéritif!
