Après les « gaufres flamandes fourrées à la vanille », je vous propose cette fois les gaufres sèches de Dunkerque. Il s’agit de petites gaufres au beurre, bien croustillantes un peu comme des sablés. Du coup, c’est une recette parfaite pour les personnes qui n’ont pas de four. Il vous faudra cependant trouver la plaque appelée à « gaufrettes » pour pouvoir réaliser cette recette. C’est sans doute là que réside la plus grande difficulté. Je l’ai trouvée chez Darty à Paris, mais quand j’ai vu l’emballage, il était évident qu’elle était dans l’entrepôt depuis au moins 20 ans…!
1/2cuillérée à caféde cannelleen poudre (facultatif)
Instructions
La veille, mettre la vergeoise blonde et la farine dans un grand bol.
Ajouter le beurre fondu et l’oeuf battu (c’est le seul moyen de peser 40g d’oeuf).
Mélanger à la cuiller puis ajouter le rhum ambré et la cannelle en poudre.
On obtient alors une pâte très souple.
La mettre dans un film étirable.
Et laisser reposer au frais pour durcir la pâte.
Au bout de deux heures, rouler la pâte sur un plan de travail fariné en un boudin de 3 ou 4 centimètres de diamètre.
Couper le boudin en deux et envelopper chaque boudin obtenu dans un film étirable et laisser reposer une nuit au frais.
Le jour de la cuisson, mettre la machine à gaufres (munie de la plaque « gaufrettes ») à chauffer pendant 10 minutes. Couper dans le boudin des tranches d’un centimètre.
Mettre un pâton sur chaque plaque à « gaufrette ».
Fermer la machine et bien aplatir doucement et complètement.
Laisser cuire 3 minutes (environ!) pour obtenir des gaufres bien dorées mais pas trop caramélisées. Les enlever avec une spatule non métallique.
Et laisser refroidir et durcir sur une grille à pâtisserie.
Le temps que d’autres gaufres cuisent, découper (c’est optionnel) avec un cercle de la taille des gaufres obtenues.
Conserver en boite hermétique (ou métallique) ou emballer dans un papier cristal pour les offrir!
