Les shortbreads sont des petits gâteaux écossais. Une recette d’une facilité enfantine à préparer. 1 2 3, voilà les proportions. Mais surtout beaucoup de beurre salé! Ces biscuits sont croustillants et fondent en bouche. A déguster sans retenue..!Il faut savoir que la véritable recette d’origine des shortbreads était à base de farine d’avoine. C’est d’ailleurs sans doute ce qui leur a donné leur nom. Car « shortbread » ne signifie non pas « pains courts », mais gâteaux friables, « short » était du vieil anglais pour signifier « friable »! Mais aujourd’hui ils sont plus connus avec de la farine et l’ajout (comme dans ma recette) de fécule. On peut leur donner la forme que l’on souhaite. Les plus courants étant ceux en forme de rectangle et de rond.
Mettre le beurre très mou dans un grand bol. Ajouter le sucre glace.
Bien mélanger.
Ajouter la farine et la fécule de pomme de terre.
Bien mélanger et ramener la pâte en boule.
Mettre la boule sur une feuille de papier sulfurisé.
Étaler la pâte sur 1 centimètre d’épaisseur et couper des rectangles réguliers d’environ 5cm sur 1,5. Piquer la surface des rectangles avec la pointe de ciseaux pointus.
Cuire les shortbreads 12-13 min. Les gâteaux doivent rester blancs. Laisser sécher sur une grille. Conserver les gâteaux en boîte hermétique.
