Je vous propose ici deux recettes de mousses au chocolat. Une très aérienne, et l’autre un peu plus ferme. Dans tous les cas ces recettes sont simples à préparer et délicieuses à déguster!
Fondre au micro-onde ou au bain-marie le chocolat et le beurre (salé ou de cacao). Le fait d’ajouter un peu de beurre va permettre au chocolat de ne pas durcir tout de suite avec l’ajout de jaune d’oeuf. Et dans le cas du beurre de cacao, de figer un peu plus la mousse.
Séparer les blancs des jaunes. Fouetter les blancs en neige.
Ajouter les jaunes un par un au chocolat fondu. le chocolat ne doit pas être chaud !
Ajouter les blancs en neige ferme au mélange chocolaté. Mélanger avec une spatule en soulevant bien la pâte pour ne pas faire retomber les blancs!
Verser la mousse dans des ramequins individuels ou dans une jatte.
