Je vous propose cette fois une recette de petits sablés salés au thym et au romarin. Ils sont idéaux pour accompagner les apéritifs, avec un verre de vin ou de champagne! Ces petits sablés sont friables à souhait et riches en huile d’olive. Une recette simple et sans prétention, rapide à préparer et délicieuse à déguster! Le secret de leur réussite? Leur finesse. Ils seront en effet bien meilleurs si ils sont fins et croustillants. J’utilise pour cela technique au pistolet que nous avons vu dans les « sablés au blé noir de Portsall ».
Mettre le parmesan râpé, le sel, les herbes, le beurre, l’huile d’olive et l’oeuf dans un bol et bien mélanger pour obtenir une crème.
Ajouter la farine d’un coup.
Mélanger jusqu’à homogénéisation de la pâte mais pas plus!!
Préchauffer le four à 190°C.On peut réaliser les formes que l’on souhaite. J’ai utilisé la même technique que pour les « sablés au blé noir de Portsall », c’est à dire que je mets la pâte dans un pistolet à biscuit. Je laisse reposer le tout pendant une heure avant de couper des tranches de pâte avec un seul cran. Mais on peut utiliser toutes les techniques que l’on souhaite, il faut juste faire des sablés assez fins.
Parsemer d’herbes séchées (j’ai remis du romarin).
Puis de la fleur de sel. Aplatir très légèrement les sablés avec la main pour incruster le sel et les herbes dans la pâte.
Laisser cuire 15 minutes à 190°C.
Laisser refroidir sur une grille puis déguster en apéritif!
