Lors de mon séjour en Andalousie (voir le voyage culinaire en cliquant ICI), j’ai eu la chance de visiter Arcos de la Frontera peu de temps avant la Semaine Sainte. C’est en effet à ce moment là qu’ils préparent ce gâteau typique de la ville. Je serais arrivé plus tôt ou à un autre moment de l’année, je n’aurais jamais connu ce gâteau si original! La forme me donnait l’impression que j’allais manger un sablé quelconque, mais c’était sans compter sur le goût délicieux de l’anis, du sucre et de l’huile d’olive. J’avais vu la composition sur le paquet artisanal et je me suis donc mis au travail à la maison pour vous reproduire la recette! La pâte est un plaisir à travailler et se fait en quelques minutes. De plus ces gâteaux sont délicieux avec un thé et se conservent très longtemps dans une boite appropriée.
Mettre la farine, le sucre, les graines de sésame et l’anis dans la cuve d’un robot ou dans un grand bol.
Mélanger, ajouter la cannelle en poudre.
Ajouter l’huile d’olive.
Diluer la levure fraîche ou déshydratée dans un peu d’eau tiède.
Mélanger et ajouter l’eau nécessaire à la confection d’une pâte manipulable.
Laisser reposer 1 heure dans un endroit tiède. Mettre du sucre sur le plan de travail. Rouler la pâte dans le sucre et la travailler un peu pour incorporer du sucre.
Diviser la pâte en 9 pâtons. Rouler chaque petit pâton en boudin dans le sucre.
Quand le boudin est formé, s’assurer que le sucre l’enveloppe bien.
Enrouler le boudin sur lui-même et fermer en appuyant la pâte sur les extrémités jointes.
Mettre 3 amandes par gâteau en les enfonçant dans la pâte. Une amande doit fermer la jointure!
Cuire à 190°C pendant une quinzaine de minutes, en surveillant! Tout dépend du four utilisé! Laisser refroidir puis conserver dans une boite hermétique. Comme il n’y a ni oeuf ni beurre, on peut les garder vraiment longtemps!
