Pour Noël, voici une ultime recette de chocolats très simple à réaliser et vraiment explosifs en texture et saveurs ! Ces rochers suisses sont vraiment addictifs. Ils croustillent, ils craquent, ils fondent… De plus, on n’a pas besoin de matériel particulier : pas de moule, pas de cadre, juste une cuiller à soupe et un thermomètre. Ils feront vraiment leur petit effet auprès de vos invités ou auprès des chanceux à qui vous les offrirez. Préchauffer le four à 180°C.Mettre les amandes en bâtonnets dans un bol.
Ajouter le sirop de sucre de canne et le sel. Pour cette recette, je prends du sirop Canadou, le sirop que l’on utilise pour faire les planteurs!
Bien mélanger.
Mettre toutes amandes sur une plaque à pâtisserie garnie de papier sulfurisé. Mettre au four à 180°C
Toutes les 5 minutes, mélanger les amandes avec une cuillère. Au départ, il y a du sirop sous les amandes: pas de panique ! Le sirop va finir par s’évaporer et les amandes vont bien griller !
Je ne sais pas combien de temps cela prend, mais au bout de 15-20 minutes, les amandes sont bien grillées et le sirop a disparu (les amandes sont bien sèches).
Verser les amandes dans un grand bol puis ajouter le beurre.
Verser le chocolat tempéré (ici du chocolat au lait Valrhona).

Former des petits tas avec une cuiller à soupe sur un papier sulfurisé. Il faut y aller doucement car sinon le tas s’effondre. On peut aussi tout à fait les mettre dans des mini moules à muffins en silicone.
Laisser cristalliser une ou deux heures (cela dépend grandement de la température ambiante). Conserver en boîte hermétique à l’abri des regards.
