Commencez par préparer les boulettes :mettez tous les ingrédients, sauf les herbes fraîches, dans un mixeur en vous assurant bien de l'absence d'arrêtes dans le poisson. Mixez pendant 1 minute.
Transvasez la farce dans un récipient puis ajoutez les herbes ciselées. Formez des boulettes de la taille d'une petite balle de ping-pong.
Faites cuire les boulettes dans une poêle avec un peu d'huile bien chaude. Remuez fréquemment les boulettes pour garder leur forme.
Versez la crème ou le mélange crème lait de coco dans la poêle, ajoutez les épices, le bouquet garni, le confit d'estragon, le sel aux algues (à votre goût) puis laissez cuire jusqu'à ce que la sauce épaississe.
Ajoutez l'estragon frais puis enfin les boulettes pour les réchauffer.
Servez les boulettes avec des pommes de terre vapeur ou du riz nature.
