Cette version est rapidement préparée et donne un riz au lait onctueux, qui ravira tous les adeptes, comme moi, de riz au lait maison ! J’ai cette recette depuis mon adolescence (ça fait un moment !!) et je l’adore car elle n’est pas trop sucrée et le riz est bien crémeux.
Lavez le riz à grande eau en le mettant dans ne passoire fine pour que les grains n s’échappent pas.
Faites cuire le riz dans de l’eau bouillante pendant 5 minutes.
Égouttez le riz puis remettez-le dans la casserole avec le lait. Conseil de Bernard: quand j’ai égoutté le riz et que je le remets dans la casserole avec le lait, je laisse le tout reposer et je pars faire autre chose… De cette façon, le riz commence à gonfler dans le lait et quand je me décide enfin à le cuire, il prend beaucoup moins de temps et j’ai moins à surveiller avec une cuiller en bois…!
Ajoutez la gousse de vanille fendue en deux et grattée, vanilline vidée dans le lait.
Laissez cuire sur feu doux en remuant régulièrement.
Quand le lait est presque complétement absorbé, ajoutez le sucre.
Laissez cuire encore 5 minutes jusqu’à la consistance voulue du riz au lait.
Servir tiède ou froid avec de la confiture ou de la gelée de fruits!
Si le riz raffermit trop la nuit, n’hésitez pas à y versez du lait pour qu’il retrouve tout son crémeux !!
