Je vais me relancer dans les quiches, car c’est vraiment simple à faire pour un résultat immédiat et savoureux. Souvent spectaculaire également, car si on la réalise dans un cercle à mousse (plus haut qu’un cercle à tarte!) plutôt que dans un plat à tarte, elle prendra des allures de quiche haut de gamme! Cette quiche au saumon fumé et aux épinards régalera tout le monde, qu’elle soit chaude, tiède ou froide. Ce sera tout de même toujours meilleur à la sortie du four avec la pâte feuilletée encore toute croustillante.
Laver les feuilles d’épinards avec précaution. Je remplis mon évier d’eau, je lave bien les feuilles, puis je les rince.
Enlever la nervure centrale des feuilles. Bien essorer (dans une centrifugeuse à salade).
Mettre l’huile d’olive et le beurre dans une casserole et y faire cuire les épinards. Les épinards seront assez cuits quand ils ne rendront presque plus d’eau.
Pendant ce temps, préparer la migaine: mélanger les oeufs et la crème (sur la photo il y a 5 oeufs, mais pour 400g de crème, il faudra bien 4 oeufs!).
Saler (pas trop car le saumon est aussi salé!) et poivrer.
Ajouter les épinards égouttés.
Bien mélanger.
Couper le saumon fumé en morceaux.
Puis l’ajouter dans l’appareil aux épinards.
Foncer (garnir de pâte) un cercle à mousse (pour une quiche épaisse) de 20cm de diamètre et 4,5cm de hauteur. On peut changer de cercle ou encore la faire dans un moule classique!
Remplir de crème aux épinards et saumon.
Mettre au four à 190°C pendant 40 minutes en surveillant tout de même au bout de trente minutes. Il faut adapter la cuisson à son propre four! La quiche ne doit presque plus trembloter au centre.
Décercler avec soin puis déguster chaude ou froide avec une salade!
