Depuis le temps que je rêvais d’en refaire ! Avec mon blog de cuisine, je ne cherche même plus de prétexte pour me préparer de bonnes choses à la maison. C’est presque un devoir ! Blague à part, je suis un vrai fan des profiteroles, avec la sublime sauce au chocolat, le chou frais et la crème glacée vanille. Mélange des textures, des saveurs, c’est une explosion dans votre assiette, surtout quand les profiteroles sont accompagnées d’amandes effilées grillées et de la saucière de chocolat chaud à profusion…
Mettez la farine et la cassonade dans un grand bol.
Ajoutez le beurre à température ambiante.
Malaxez le tout jusqu’à parfaite incorporation du beurre.
Étalez la pâte le plus finement possible entre deux feuilles de papier sulfurisé. Transvasez le tout sur une plaque puis mettez au frais.
Préparez la pâte à choux comme je l’explique ICI avec seulement la moitié des ingrédients. Vous pouvez aussi choisir de faire la recette entière pour en faire l’autre moitié en version chouquette ! Avec la poche à douille (douille 8mm) formez vos choux.
Coupez la pâte avec un petit cercle de 2 ou 3 cm de diamètre.
Posez la pâte à craquant sur chaque chou.
Enfournez à 190°C et laissez-les cuire 15 à 20 minutes. Ils doivent être bien gonflés et dorés.
Préparez votre sauce au chocolat :
Mettez le chocolat noir avec la crème liquide entière au four à micro-ondes pour 1 minute ou au bain-marie.
Faites bien fondre le chocolat.
Ajoutez progressivement l’eau chaude tout en mélangeant.
La sauce devient grumeleuse puis devient comme par magie très lisse et brillante: elle est prête !
Ouvrez vos choux en deux puis garnissez-les d’une boule de glace vanille. Je l’ai préparée maison avec la recette que je vous donne LÀ.
Prévoyez 3 choux par personne.
Versez au dernier moment la sauce au chocolat encore brûlante et parsemez des amandes effilées et grillées. Servez sans attendre avec à disposition la sauce au chocolat pour les plus gourmands !!
