Il y a quelques semaine j’ai été invité avec plein d’autres auteurs culinaire à Roanne au salon Savoirs et Saveurs. Le soir, nous avons été invités à diner chez Troisgros, au Grand Couvert, un restaurant magnifique en pleine campagne. Comme vous vous en doutez déjà, il y avait des pommes dauphine et cela faisait vraiment longtemps que je n’en avais pas mangées… J’ai donc eu envie d’en refaire en arrivant à la maison et voilà !! Je vous propose la recette. Un délice avec une viande juste saisie, des épinards à la crème et un bon verre de vin rouge…
Faites cuire vos pommes de terre à la vapeur. Épluchez-les et passez-les au presse-purée ou écrasez-les soigneusement à la fourchette.
Vous devez obtenir une purée assez lisse.
Pesez-en 200g et mettez les dans une casserole dans les 25g de beurre demi-sel.
Faites chauffer sur feu modéré pendant 5 minutes pour l’assécher un peu.
Réservez cette purée et préparez la pâte à choux. Mettez le lait, l’eau, le beurre demi-sel et le sel dans une casserole.
Portez à ébullition sur feu doux.
Ajoutez la farine d’un coup hors du feu.
Mélangez bien (même assez vivement!!) puis remettez sur feu doux pendant 1 minute afin d’assécher la pâte. Il faut mélanger constamment. La pâte va se détacher du fond de la casserole.
Versez la pâte dans un bol.
Ajoutez les 150ml d’œufs battus petit à petit sur la pâte. Mélangez bien avant d’ajouter le reste des œufs.
Mélangez de façon énergique pour homogénéiser le tout.
Ajoutez la purée et mélangez de nouveau.
Faites chauffer une casserole d’huile. Quand l’huile est assez chaude, prélevez une cuillerée à café de pâte et faites-la tomber en vous aidant d’une deuxième cuillère.
Faites frire les pommes dauphine jusqu’à ce qu’elles se colorent bien.
Mettez-les au fur et à mesure sur du papier absorbant.
Dégustez-les encore bien croustillantes avec une viande et des épinards à la crème par exemple…
