Voici une petite recette sympathique à mi-chemin entre le « lemon-curd » et la crème du tiramisu. Cette recette me vient d’une collègue de travail, Elizabeth. J’ai effectué quelques transformations sur la recette initiale, mais je vous donne les deux recettes. Un grand merci à Elizabeth! Et pourquoi ne pas finir un repas avec un nuage doux et incisif à la fois? Pour la recette d’Elizabeth, il suffit de mélanger les jaunes avec le sucre et de blanchir. Il faut ensuite chauffer le jus de citron et y ajouter les feuilles de gélatine trempées. On ajoute le jus de citron au mélange jaune et sucre. On ajoute le mascarpone puis les blancs montés en neige.
Pour ma version: Presser le jus de deux citrons verts. Mettre les feuilles de gélatine à tremper.
Mettre le jus dans une casserole avec un œuf entier + un jaune (sur la photo il n’y a qu’un jaune, mais c’est bien deux!) et le sucre semoule.
Cuire sur feu doux en fouetter continuellement jusqu’à 85°C.
Ajouter les feuilles de gélatine trempées et essorées.
Bien mélanger et ajouter le beurre doux.
Laisser complètement refroidir! Ajouter le zeste de deux citrons verts.
Ajouter le mascarpone puis fouetter 5 minutes.
Monter les blancs en neige ferme et serrer avec le sucre glace.
Et ajouter les blancs à la préparation au mascarpone en soulevant bien pour ne pas faire retomber le tout.
Disposer dans des ramequins ou des coupes et laisser reposer au frais pendant au moins 3 heures avant de servir. Déguster avec des sablés diamants (par exemple).
