Un de mes amis, Jean-Philippe, m’a un jour fait goûter ces sablés « bio » à la farine d’épeautre et aux amandes. Ils étaient en effet délicieux. Nous nous sommes demandés comment les faire… J’ai donc juste regardé les ingrédients et leurs proportions et je lui ai dit que j’allais retrouver la recette à l’identique. C’est chose faite! Ils ont un goût de frangipane grâce à l’ajout d’arôme d’amande amère, ne sont pas trop sucrés et ont une texture agréable par la farine demi-complète d’épeautre… À essayer tout de suite! Ces sablés se trouvent à l’origine dans les boutiques « bio ». En regardant le paquet, j’ai bien noté et ma recette donne exactement ces sablés un peu épais. Tous les ingrédients se trouvent dans les magasins « bio », surtout la farine demi-complète d’épeautre T110.
Voici la farine utilisée dans la recette. On la trouve sans souci dans les boutiques bio.
Mettre la farine d’épeautre, le sucre de canne, le beurre, la poudre d’amandes, le sel et l’extrait d’amande amère dans la cuve d’un batteur.
Bien mélanger pour sabler l’ensemble. On ne doit plus distinguer le beurre. Ajouter l’œuf.
Mélanger de nouveau pour homogénéiser le tout et ramener la pâte en boule.
Étaler la pâte sur une épaisseur de 7mm puis couper des sablés à l’emporte-pièces.
Placer les sablés sur une plaque à pâtisserie garnie de papier sulfurisé puis laisser reposer au frais une heure.
Chauffer le four à 180°C puis cuire les sablés 20 minutes. Surveiller la cuisson, car comme toujours, la durée dépend de la puissance du four de chacun! Laisser ensuite refroidir et durcir les sablés sur une grille.
