On est au mois de mai et il fait froid, il pleut (du moins à Paris) et il fait très moche. Il me faut beaucoup de courage pour sortir de la couette le matin… J’avais envie de réconfort et je me suis offert ces petits mi-cuits au cœur coulant de caramel. J’ai fait plusieurs essais pour que le caramel soir bien enfermé dans la pâte sans trop interférer sur sa cuisson. D’ailleurs, pour que cela fonctionne parfaitement, je prépare tout la veille : caramel et pâte à gâteau. À faire et refaire pour ensoleiller la journée !
Vous pouvez (et il vaut mieux) préparer tout la veille. Pour le caramel, versez le sirop de glucose dans une casserole. Vous aurez peut être trop de caramel, mais je ne pense pas que cela soit un souci pour vous ! ????
Ajoutez le sucre et le sel.
Versez l’eau puis portez à ébullition.
Faites bien attention à ne pas sur-brûler le caramel. Il doit être bien ambré.
Quand il a une belle couleur, versez la crème liquide entière hors du feu.
Mélangez bien et laissez refroidir à température ambiante.
La veille aussi, faites la pâte. Faites fondre ensemble le beurre et le chocolat.
Mélangez dans un autre récipient les œufs, les jaunes et le sucre glace.
Mélangez au fouet pour dissoudre le sucre, mais sans insister.
Versez le chocolat/beurre fondu puis mélangez bien.
Terminez avec la farine. Mettez ensuite la pâte au frais toute la nuit et placez le caramel au congélateur.
Le lendemain, graissez vos moules (des moules en aluminium). Je mets du slider à canelés, mais une bombe de démoulage fera l’affaire. Mettez la pâte froide en poche munie d’une douille à large sortie (15 ou 20mm). Placez un peu de pâte dans le fond.
Le caramel a durci (forcément il est congelé). Prélevez avec une cuillère, une bonne boulette de caramel.
Placez cette boulette congelée au centre de la pâte froide.
Recouvrez avec le reste de pâte dans les 5 moules.
Faites cuire au four à chaleur tournante sur 190°C pendant 17 minutes. Le dessus doit commencer à prendre légèrement.
Vous pouvez attendre 5 minutes avant de démouler sur une assiette et regarder d’un air ébahi le caramel sortir du gâteau…
