Voici une nouvelle recette de macarons! Je vous propose ma version café-chocolat. Il s’agit cette fois de coques de macarons aromatisées au café (la couleur est du coup naturelle) avec une ganache moelleuse au chocolat doux et au café. L’un est l’autre créent une osmose parfaite, un arôme corsé mais suave pour ces macarons ambrés et délicieusement chocolatés!
Commencer par réaliser une recette de macarons. Voir ici pour la recette en images. À la différence qu’il faut ajouter le café soluble dans les blancs d’œuf qui vont dans le tant pour tant.
Bien mélanger pour dissoudre le café.
Et ajouter les blancs au café au tant pour tant.
Puis procéder comme expliqué dans la recette.
Pour la ganache au chocolat. Chauffer la crème entière et la verser sur le chocolat coupé en morceaux (ou les pastilles comme le mien!).
Ajouter le beurre mou et mélanger au fouet pour tout homogénéiser.
Ajouter le café soluble dans la ganache encore chaude. On peut sans doute être plus logique que moi ce jour-là et mettre le café dans la crème chauffée, avant de la verser sur le chocolat! Mais cela marche dans les deux cas.
Mettre la ganache dans une poche munie d’une douille et laisser celle-ci se raffermir. Quand la ganache est « modelable », garnir les coques de macarons.
Refermer les macarons et laisser au frais dans une boit hermétique 24h! C’est indispensable pour le développement du moelleux du macaron.
