Vous connaissiez sans doute le kouign aman, un délicieux gâteau du Finistère. Je vous présente cette fois sa version miniature aux framboises! Une douceur délicieusement beurrée, avec en son centre un coeur tendre à la confiture de framboises. Je vous propose pour l’occasion une nouvelle version de pliage pour cette pâte parfois difficile à étaler (beurre+sucre!). Il n’y a rien de compliqué, que l’on se rassure!
Commencer par délayer la levure fraiche ou sèche. Pour la levure fraiche, l’émietter avant!
Ajouter 50g d’eau bien tiède et bien mélanger pour dissoudre toute la levure.
Ajouter le sel et la farine et bien mélanger. Ajouter ensuite le reste de l’eau tiède en mélangeant bien, soit au robot, à la machine à pain ou à la main!! Si l’on a une machine à pain, procéder comme pour un pain mais sur le programme « pâte levée »!!
Pétrir la pâte sur une surface propre en procédant comme dans la recette des riavolis de Shangai! Mettre la pâte dans une terrine, tracer une croix au couteau sur le dessus et couvrir d’un linge propre.
Laisser gonfler pendant au moins une heure trente deux heures.
Étaler la pâte à pain en un rectangle et l’envelopper dans un film étirable. Le réserver au frais pendant une heure. Écraser le beurre (encore frais) au rouleau dans un film étirable à la dimension du pâton.
Sur un plan de travail fariné, commencer à étaler le pâton pour qu’il soit deux fois plus long qu’au départ. Placer le beurre (mou mais frais, car écrasé au rouleau) au centre.
Rabattre le pâton sur le beurre.
Tourner le pâton de 90° puis l’étaler.
Une fois étalé, plier la pâte en trois. (tour double)
Placer dans du film étirable puis réserver au frais 20 minutes.
Sortir la pâte puis lui redonner un tour double en l’étalant puis en pliant en trois.
Réserver de nouveau vingt minutes au frais, puis l’étaler plus finement. Saupoudrer avec le sucre.
Plier en trois, re-sucrer avec le sucre non incorporé.
Il ne faut pas re-fariner le plan de travail, il faut utiliser le sucre pour cela! Étaler un dernière fois la pâte puis étaler la confiture sur la moitié de la pâte (pas les deux tiers comme la photo!! Mais bien la moitié!). J’utilise pour l’occasion une délicieuse confiture du pays Léonard des Monts d’Arrée.
Enrouler la pâte en un boudin assez serré.
Puis couper en tranches. Placer les tranches dans des moules à muffins « silicone ». La recette suffit normalement à faire 12 kouignettes.
Cuire à 180°C pendant 25 à 30 minutes en surveillant pour ne pas laisser brûler.
