Lait de coco frais aux billes de tapioca et bananes
Voici une recette simple et pourtant pleine de saveur. Un lait de coco servi très froid, légèrement sucré avec des billes de tapioca et des bananes fraiches, arômatisé aux feuilles de pandan. Un dessert totalement végétalien que j’ai fait pour une personne végane. J’avais fait des desserts thaïlandais dans mon premier livre, « Mes desserts » (Fammarion 2014) et j’avais mis une recette de lait de coco frais avec des châtaignes d’eau à la fécule de tapioca, et un lait e coco chaud aux bananes cuites. Ici, c’est encore plus simple. Il faudra juste mettre le tout au frais pour servir glacé avec des tranches de bananes.
Voici les billes de tapioca que j’avais achetées chez Paris Store. Celles-ci sont déjà parfumées à l’arôme de pandan. Vous pouvez réaliser cet arôme naturel vous-même (voir recette ICI) ou en acheter un artificiel (voir LÀ).
Placez le sucre de palme (ou le sucre roux) dans une casserole.
Versez le lait de coco et faites chauffer jusqu’à ce que le sucre ait fondu.
Ajoutez les billes de tapioca. Si elles sont sont blanches, ajoutez l’arôme de pandan.
Si elles sont colorées et parfumées, versez-les directement.
Mélangez sans vous arrêter sur feu doux pendant une dizaine de minutes.
Laissez reposer complètement puis placez au frais une nuit si possible ou au moins 4 heures. Coupez les bananes en morceaux et mettez-les dans un bol par personne.
