Première recette réalisée de chez Valentin. Encore merci à l’équipe pour ces journées de stage. Je commence donc avec les gourmandises, une recette très simple (si l’on ne tempère pas le chocolat) mais surtout incroyablement addictive! Cela faisait longtemps que je me disais que je voulais faire ces sortes de roses des sables en chocolat, mais je ne suis pas un grand fan de corn flakes. Jusqu’à ce que je les goûte au Valentin! Les gourmandises sont délicieuses avec leurs noix, leurs noisettes et leur chocolat (lait ou noir) tempéré et craquant. À essayer tout de suite!
300gchocolat lait ou noir (idéalement de la couverture tempérée)
Instructions
Mettre les cornflakes dans un grand récipient (quand on va mélanger, ça risque de déborder dans un petit récipient!).
Mélanger les noix et les noisettes.
Les hacher avec avec un grand couteau.
Les passer 8-10 minutes (en surveillant) à 180°C au four, pour les torréfier légèrement.
Les ajouter aux corn flakes.
Faire fondre le chocolat choisi (noir ou lait). L’idéal est d’utiliser de la couverture, pour obtenir un chocolat tempéré (qui ne blanchira pas en refroidissant). Voir la méthode du chocolat tempéré ici!
Utiliser la méthode au caco mycryo que je décris ici!
Ajouter le mycryo… Cette étape ne concerne que ceux qui ont la couverture. Sinon il suffira alors de verser le chocolat fondu directement sur les corn flakes.
Verser sur les pétales de maïs.
Et bien mélanger!
Il ne faut plus voir la couleur des corn flakes, tout doit être enrobé de chocolat. Il faut donc mélanger assez longtemps car il y a assez de chocolat pour cette quantité de corn flakes, mais cela prend du temps pour couvrir parfaitement les pétales.
Faire des tas. Il est plus facile de s’aider d’un cercle de 10cm. Remplir le cercle et tasser légèrement sans écraser les pétales.
Tourner le cercle et tirer délicatement vers le haut.
Continuer de la même façon pour les autres gourmandises.
Laisser ensuite cristalliser les gourmandises au moins 1 heure (ou deux!) avant de les briser et de les dévorer.
Les gourmandises se conservent longtemps, car tout se conserve (chocolat, noix et corn flakes!).
