Voici ma recette de gougères au fromage. Elles ont une texture extrêmement savoureuse. Toutes croustillantes à l’extérieur, elles révèlent un coeur fondant à l’intérieur. On peut les faire de toutes les tailles, mais je les préfère plus petites, car de cette façon elles croustillent encore plus grâce à l’ajout de fromage sur le dessus. Une petite merveille toute simple à réaliser.
150gconté ou de gruyère râpé (l’emmental est moins bon!!) + un peu pour parsemer
Instructions
Préchauffer le four à 180°C.Mettre l’eau, le beurre et le sel dans une casserole.
Porter à ébullition sur feu doux.
Ajouter la farine d’un coup hors du feu.
Bien mélanger (même assez vivement!!) puis remettre sur feu doux pendant 1 minute afin d’assécher la pâte. Il faut mélanger constamment. La pâte va se détacher du fond de la casserole.
Verser la pâte dans un bol.
Ajouter les 250ml d’œufs battus petit à petit sur la pâte (en remuant bien à chaque fois).
Mélanger de façon énergique pour homogénéiser le tout.
Ajouter le fromage râpé.
Poivrer et ajouter de la noix de muscade râpée.
Avec une poche à douille, faire des petits tas. Peu importe la forme, ils vont gonfler.
Parsemer de fromage râpé sur le dessus.
Enfourner et cuire 18-20 minutes à 180°C. Déguster chaud! Les gougères seront ainsi croustillantes sur le dessus et toutes fondantes à l’intérieur.
