Il y a beaucoup de recettes de gaspacho (ou gazpacho). Il y en a avec de la mie de pain. J’ai essayé et je préfère la version qui ne contient que des légumes. On trouve quand même cette recette en Espagne, car il y a des variantes, comme les crêpes chez nous. Cette recette n’est pas figée et je vous invite à l’adapter à votre goût!
Voici tous les ingrédients pour la recette que je vous propose:
Commencer par éplucher les poivrons rouges. Avec un bon économe, cela ne pose aucun souci!
Enlever la partie blanche à l’intérieur et se débarrasser des pépins.
Éplucher le concombre.
Couper en deux dans la longueur puis enlever la partie du milieu avec une cuillère.
Éplucher l’oignon et le couper en deux. Je ne mets qu’un demi-oignon, car sinon le gaspacho est trop fort.
Plonger 20 secondes dans de l’eau bouillante, les tomates que l’on aura pris soin d’inciser sur le dessus.
Enlever la peau.
Enlever également la partie où se trouvait la branche. Puis se débarrasser des pépins en pressant les tomates.
Éplucher l’ail.
Mettre tous les légumes dans un blender.
Ajouter le vinaigre, le sel et le poivre.
Puis l’huile d’olive.
Mettre le blender en route pour au moins une minute pour bien réduire en fin velouté. On peut ajouter à ce moment une cuillerée à soupe de double concentré de tomates (ce que j’ai fait!). Cela va renforcer le goût de la tomate. Mais cela n’est pas forcément très traditionnel, mais cependant très bon!
Mettre au frais au moins 3 heures avant de consommer!
