Dans les mezzés libanais, on nous propose souvent ces délicieux foies de volailles. Il y en a plusieurs recettes, mais je me suis penché sur celle-ci car elle comprend tout ce que j’aime, du citron, du miel, du persil plat et de la coriandre. La seule difficulté est de trouver l’épice principale, le summac! Mais dans les magasins spécialisés ou traiteurs libanais on peut se la procurer.Pour ceux qui habitent Paris, je conseille d’aller voir ma rubrique « Mes Adresses » pour trouver les épiceries qui vendent le summac (ou sumac, summak…)!
