Vous avez peut être découvert cette recette délicieuse dans mon voyage culinaire de Pékin. Ce plat est vraiment très rapide à préparer et est très original grâce à ses étranges champignons. Quand j’ai vu le plat arriver au restaurant « Source », j’ai d’abord cru que c’était des pâtes… J’ai bien analysé le plat pour vous en délivrer la recette ici! Ces champignons sont pour 80% cultivés au Japon, mais sont cuisinés dans toute l’Asie.
Voici les"enokis"... C'est très facile de les trouver dans les épiceries asiatiques. Pour ma part, je les ai achetés che Paris Store dans le 13ème. De plus, ils ne sont pas chers du tout! Aux alentours de 5€ le kilo (novembre 2010).
Il suffit simplement de couper la base au couteau des enokis, puis de les séparer.
Désosser les hauts de cuisses et enlever la peau. Puis le couper en très petits morceaux.
Hacher finement les gousses d'ail et le gingembre. J'ai mis dans la recette 6 gousses d'ail, mais le goût n'est pas aussi prononcé que l'on pourrait le penser. On peut en mettre une en plus ou en moins, mais je pense sincèrement que 6 est un bon chiffre!
Chauffer l'huile dans un wok (ou une autre poêle haute comme celle de la photo) sur feu vif.
Ajouter le poulet haché.
Faire revenir en le tournant régulièrement puis ajouter l'ail et le gingembre.
Quand l'ail et le gingembre commence à colorer, ajouter les enokis.
Quand les enokis deviennent mous (3-4 minutes), ajouter l'eau, le sucre et la sauce de soja.
Puis la maïzena et bien mélanger. Conseil de Bernard: on peut, pour se faciliter la tâche et éviter quelques grumeaux, diluer la maïzena dans l'eau avant de la verser dans la poêle.
Laisser s'épaissir la sauce une minute puis ajouter la ciboulette chinoise en petits morceaux!
