Les financiers sont de délicieux petits gâteaux qui ont été crées vers 1890 par le pâtissier Lasne, aux alentours de la Bourse de Paris. Ils ont la forme de lingots d’or et ont été nommés ainsi pour amadouer le client fortuné du coin, le financier de la Bourse. Ce fût un succés immédiat! Et on comprend pourquoi! Je propose ici une variante à la pistache.
Mélanger tous les ingrédients sauf le beurre dans une bol. Bien mélanger pour bien incorporer la pâte de pistache.
Faire fondre le beurre dans une casserole jusqu’à ce qu’il mousse.
L’ajouter directement dans la pâte aux amandes et bien mélanger le tout.
Verser la pâte dans des moules à mini-financiers, puis cuire directement au four pendant 15 à 20 minutes (tout dépend de la puissance du four).
Ils ne doivent pas être trop cuits, juste un peu craqués sur le dessus et légérement dorés! Si ils ne sont pas consommés dans la journée (ce qui est rare!), dans ce cas les conserver dans une boîte hermétique.
