Voici les feuilles de menthe cristallisées au chocolat. Elles craquent, elles croquent, elles croustillent! Avec un chocolat parfaitement tempéré, la menthe est une alliée redoutable! Une petite recette simplement délicieuse, que j’avais découverte grâce à ma bonne amie Annick, qui devait m’en offrir un paquet, mais qui avait tout mangé avant de pouvoir me le remettre en mains-propres!
Voici les ingrédients nécessaires à la confection de cette petite friandise! Il faudra une menthe extra-fraîche de qualité!
Laver la menthe et ne prélever que les plus belles feuilles!
Il faut battre légèrement le blanc (on ne veut pas des blancs montés en neige!!), juste pour « casser » sa consistance, pour le rendre plus liquide.
Tremper les feuilles de menthe, des deux côtés dans le blanc. On peut aussi passer un pinceau trempé dans le blanc, sur les feuilles. Si l’on trempe les feuilles, il faut bien enlever l’excédent de blanc avec les doigts!
Puis passer les feuilles de menthe dans le sucre. Conseil de Bernard: on peut choisir entre sucre semoule ou sucre cristal. J’aime le sucre cristal car il est plus craquant, mais il se peut que ce soit un peu trop sucré pour certaines personnes. Dans ce cas, on peut choisir de mettre du sucre semoule plus fin!
On peut aussi choisir de saupoudrer chaque feuille de sucre, pour ne pas avoir de « paquets de sucre » qui se forment inévitablement. Cela prend un peu plus de temps, mais le résultat sera impeccable! Il faut passer le sucre sur les deux faces de la feuille de menthe!
Mettre au fur et à mesure les feuilles de menthe sur une plaque garnie de papier sulfurisé.
Mettre au four 1h30 à 60°C sur une face, puis retourner les feuilles et recuire 45 minutes. L’idéal pour cuire l’autre face, et de changer le papier ou alors de les faire cuire sur une grille! On voit là les feuilles à l’envers.
Pour une trentaine de feuilles de menthe, il suffit de 150 à 200g de couverture tempérée. Passer une couche de chocolat au pinceau sur la face la moins jolie (le dessous des feuilles).Pour tempérer le chocolat, cliquer ici!
Puis laisser cristalliser le chocolat à température ambiante.
Et conserver en boîte hermétique ou en paquet pour offrir!
