Même si le froid s’installe en ce moment chez nous, c’est officiellement l’automne !! Et ce que j’aime pendant cette saison, c’est de pouvoir grignoter des châtaignes grillées ou alors en faire des gâteaux. C’est donc l’occasion pour moi de vous préparer ma recette de délice aux châtaignes sans farine, donc sans gluten. Ce gâteau est délicieusement croustillant en surface (grâce aux châtaignes elles-mêmes) et bien moelleux et parfumé à l’intérieur (grâce à la poudre d’amandes, la vanille, au bon beurre frais et à un soupçon de cognac). Venez vite essayer cette recette simple et rapide à préparer. De plus ces petits gâteaux se conservent bien (plus de deux semaines).
Pour cette recette, je prends volontiers des châtaignes crues de chez Picard. Elles sont parfaites ! Il suffit alors de les laisser décongeler. Sinon, la recette fonctionne bien entendu avec des châtaignes fraiches.
Broyer au hachoir à viande ou au mixeur les châtaignes en en une purée fine.
Si le hachoir est utilisé, il faudra broyer avec la grille fine.
Mettre la purée de châtaignes dans un bol, ajouter le sucre, la vanille, le beurre mou et la poudre d’amandes.
Bien mélanger et ajouter le cognac.
Puis ajouter l’œuf.
Disposer la pâte dans quatre petits moules de 9cm de diamètre, ou un seul de 18, préalablement graissés avec une bombe de démoulage.
Mettre au four à 150 degrés pendant 45 minutes.
Démouler à la sortie du four et laisser refroidir sur une grille à pâtisserie. On peut remettre les gâteaux démoulés au four pendant 5 minutes pour obtenir une surface un peu croustillante et un intérieur moelleux !
Conserver ces gâteaux dans du film étirable à l’abri de l’air.
